Vegetable Beef Minestrone

EXCELLENT/EASY! If you are in a rush just follow recipe exacatly and you can't go wrong - except - you might want to have more broth/water on hand to thin it out if you feel it is too thick - especially the next day. I needed to add more broth but it could be because the carrots I used were rather large and I needed to use 1/4 lb of elbow macaroni (since that is what I had) versus the VERY THIN pieces of spaghetti. The spices held up even after adding extra broth. I really loved this and look forward to taking it to work next week.

Bada Bing Bada Banged Potatoes

Followed exactly except I didn't have italian dressing so I made the dessing from scratch using a recipe fom this site. I did use the broiler instead of the grill. Thanks submitter.

Byrdhouse Blistered Cherry Tomatoes

I LOVE tomatoes - especially in season - I come from NJ where our tomatoes really are the best. This recipe did not do it for us at all. I'll stick with roasting for flavor.

Ono Spareribs

Delicious. Used regular baby back ribs - didn't change a thing except for cooking time of 325 for one hour each side. A great change from the bbq ribs. It was a hit.

Horseradish Pork Chops

I was skeptical about this but wanted to make something easy so i tried this. Only change was using bone in chops. This was delicious. Thanks submitter. Served with Betty Crocker au gratin potatoes, apple sauce and corn. The potatoes can cook in the oven along with the chops.

Sausage, Peppers, Onions, and Potato Bake

OUTRAGEOUS! I can't wait to make this for company. I cut the recipe ingredients to 4 servings except for liquid - kept that at 8 as others suggested. I did not have chicken broth so I used all wine. Commenters said it lacked flavor so I seasoned everything (except sausage) liberally with Goya seasoning and Italian herbs before sauteing them. The potatoes were perfect (I was skeptical). I put a lid on the peppers and onions which helped to soften them quickly. I cannot tell you how good and flavorful this came out. There were only 2 of us and we ate almost the entire dish ourselves. I'm eating the leftovers-not sharing! :) Thank you submitter.

Artichokes

Best tasting artichokes that I have ever prepared. We loved it so much that I went out the next day and bought 2 more to have for lunch. Putting the butter and garlic behind the leaves made such a difference. Thank you Shai.

Quick Sesame Green Beans

It was okay - I didn't have miso paste so I used Sesame Oil as other reviewers did. I'm not crazy about sesame oil so this might very well deserve a 5 star rating if I had been able to duplicate this recipe. Thanks submitter.

Lemon Chicken Soup II

This was ok - simple to make - I unfortunately did add a bit more rice since I wanted to use up the bag of rice I had - don't do that - the next day the rice had soaked up a great deal of the broth so I had to add more chicken broth and it took away from the flavoring.

Curried Chicken Salad

I was in the mood for curry chicken and wanted to try a new recipe. Chose this one since I had the ingredients for the dressing on hand. Did not have an apple or grapes so I threw in a very large handful of Sunsweet's Antioxidant blend of blueberries, cherries, cranberries and plums to substitute. This was delicious - must say that pinneapple and curry go great together!!! The prior reviewer said she lowered the amount of soy sauce so I did that also thinking I could add more if necessary. I did not have to add any more. Thanks reviewer and submitter!

Braised Balsamic Chicken

DELICIOUS! EASY! Only used 2 very plump chicken breasts but used the amounts called for in preparing 6 breasts (except for seasoning the chicken breasts themselves - just sprinkled on some Goya seasoning). Since the breasts were thick I slowly browned them on one side for 5 minutes, turned them over and browned other side and added the onions at that time. If I had added the onions in the beginning they would have burned. I used diced tomatoes that had oregano, garlic and basil already in it so I just had to add the thyme. At other reviewers suggestions, I used 1/4 cup of balsamic vinegar and 1/4 cup of chicken broth. Good suggestions - the vinegar was not overwhelming. I simmered (uncovered) for 15 minutes on one side and 10 minutes on the other side because of their thickness. While it was simmering the liquid reduced itself and gave a nice thick sauce to spoon over the chicken. Thanks submitter. This is a keeeper.

Oven Roasted Red Potatoes and Asparagus

I did not have a lot of time to prepare this. I microwaved 2 Idaho potatoes for 5 min. then chopped them into chunks. Used the spices - cutting back on the rosemary. I cooked the potatoes for 10 minutes in the oven and then added the asparagus for another 10 minutes. Thanks submitter.

Meatloaf with Italian Sausage

WOW! One of the best meatloaves I've ever made. I pretty much followed recipe exactly. Left out the green pepper. Added seasonings of 1/2 tbls thyme, dash of worstershire sauce, 1 tbls italian seasoning, 1/2 tbl black pepper. Used panko crumbs instead of wheat cereal. I also top the meatloaf with a small can of tomatoe sauce (put holes in the loaf with your finger and the sauce will get into the loaf).My guy loves my meat loaves and he said he thinks this is now #1. The next day I just slice up the leftovers (I always make sure I make a large enough meatloaf to have leftovers!!!) and fry the slices in a bit of oil to just heat through and put it on good old white bread with a bit of ketchup. Talk about comfort food! Thanks submitter.
