Texas Corn Chowder

I doubled the recipe for 4 and it served 6 people. I didn't have frozen corn on hand so I used a good quality canned corn (15.25 oz cans - drained thoroughly) and added the corn during the last five minutes just to heat it through. The soup was delicious but the only negative comment was that it was too thin. If I make it again I will thicken it since my family seems to think when I say "chowder" they want a creamier texture. Potluck Spareribs

I feel badly about giving this such a low rating after all previous reviewers gave it 5 stars. I give it 5 stars for the taste of the sauce and for the tenderness of the pork but unfortunately for all of us we thought the meat itself was tasteless. This was easy to make but if I ever use this again I would put some kind of rub or seasoning on it before baking it. My favorite ribs on this site are Freak'n Good Ribs and Baby Back Ribs - both must be marinated ahead of time - but it is so worth the wait!!!

Hawaiian-Style Chili

Loved it. I cut this recipe in half and one large onion was ENOUGH. I also decided to take the previous reviewer's advice and add in the juice from the canned pineapple. If I had served it immediately it would have been too watery, but I served it the next day and the texture was perfect. This does make a spicy chili so the pineapple does take a bit of the edge off. This is a keeper! My guy loved it.

Tomato Gorgonzola Soup

Obviously this is rich but it is sooo good. Very complex flavor. Took the suggestions of all the others and put it in the blender. Would not have cared for it if I hadn't pureed it. Thanks submitter.

Strawberry Onion Salad

It was a hit - didn't change a thing. Update: If you are watching calories you might want to switch to this one. I've made so many of the strawberry spinach salads from this site and love them but I'm using this one now because of the calories (or lack of them). I even halved the sugar in this and used raspberry vinegar and it is still wonderfully sweet. Thanks submitter.

American Potato Salad

I have three favorite potato salads from this site but decided to try this one to start the 2007 summer. We loved it and made minimal changes. To make this quickly - first start cooking the eggs - then take out the large bowl that you will be using to serve - I peel and dice the potatoes and rinsed them in that bowl to get out starch - put potatoes in cold water and bring to boil - then lower heat to a slow boil and cook approx. 10 to 15 min. Your eggs will probably be finised by then so cool them down with cold water. Then mix all the ingredients for dressing in the bowl - add the chopped eggs and by then your potatoes are probably ready to add. Very little clean up and no waiting time for things to be done - I added a tablespoon of ground mustard to dressing and only used 2 eggs but that is just a preference. I thought this turned out great and it was fast.

Clark's Quiche

I chose this dish because of all the high ratings - although almost everyone had to make changes. I too HAD to make changes and was glad I had the advice of others to follow. I cut the cheese in half and it was more than enough - I cut the eggs back to 6 and the amount of half and half to a cup. I was using deep dish pie crusts. If I hadn't done all that cutting back it would have been a mess and I would have been throwing out a lot of the ingredients. I didn't use salt and I'm glad I didn't. The smoked ham had enough of a salt taste. All in all - with all the changes that had to be made I think I will explore other quiches to try before I would make this again.

Instant Pistachio Salad

I agree with other reviewers about the amount of liquid. I had drained the canned pineapple but at the end added the juice back in - it would have been too dry without it. I also added a small can of fruit cocktail as others suggested.

Feta and Bacon Pasta Sauce

This was ok - I tasted the flour and I always seem to taste it when I mix the flour and milk together and just add it to the butter - I prefer making a roux and then add the cheese, etc. The combination of the feta and bacon we nice.

Jamaican Me Crazy Chili

We loved it - especially the taste of the cumin and the balsamic vinegar. I did cut back on the beans by one can and used a combination of chili powder and habenaro chili powder - so needless to say my chili was not mild. We did taste the sweetness of the chili but it was appreciated because of the heat from the chili powders and hot paprika. Thanks submitter.

Cream of Spinach Soup

I normally make Creamy Spinach Soup on this site but decided to change off. Even though the ingredients in both are ALMOST identical we much prefer Creamy Spinach Soup - it had more flavor - maybe because it uses real onions and uses half and half instead of milk. I did use 2 cups of milk in this one and 1 cup of heavy cream but it just wasn't quite as good as Creamy Spinach Soup. Only 8 people have reviewed that soup but 8 out of 8 gave it a 5. So if you are health conscious use this one - for a richer version use the other!!! Thanks submitter.

Low Carb Cauliflower Leek Soup

I had lots of leeks in the house that I had to get rid of before they went bad. This low carb recipe is a winner. Many commenters said it was too watery so I took advice of others and used only 7 cups of broth (I used chicken). It turned out thick. You might want to even try it with only 6 cups of broth and add more broth at the end to get the consistency that you want. Definitely use that cream!!! Thanks submitter.

Spinach Salad With Berries and Curry Dressing

A great salad combination but the dressing was a bit too tangy for our liking as others have commented. Next time I will try using raspberry vinegar or a cidar vinegar. The curry was a nice addition. I will make this again.

Strawberry Spinach Salad I

This was easy and delicious. Made it two nights in a row! Edit: Forget my saying I made it two nights in a row - we became addicted to this one - like another reviewer said - it is like a desert! Everyone I've served this to loves it. I actually make this when I want a snack at night when I am watch TV!!! And I don't feel guilty snacking out since it is healthy!!! Fresh Asparagus Soup

I usually make Cream of Aspargus Soup I but decided to give this a try. I made it early in the day and I did not care for it at ALL but as it sat in the refrigerator it did get a little better - but still very bland. We love asparagus and you could hardly taste it. I will stick with my Cream of Asparagus. This is a great soup for Vegans though. Thanks submitter.

Roasted Asparagus with Balsamic Vinegar

I make a VERY similar recipe that everyone asks for when I serve it. I roll the asparagus in the oil and MINCED GARLIC and then roast as directed. Near the end of roasting sprinkle on the balsamic vinegar and grated parmasean cheese and put under broiler for a few minutes. It is outrageous and pretty!

Mulligatawny Soup I

If you are looking for authentic Mulligatawny soup this is not it and the submitter said it was only Indian inspired. All in all it was good - did add garam masala and more curry. Authentic Mulligatawny soup is very time consuming to make so this is a quick fix! Thanks submitter.
