The Best Thai Peanut Sauce

Reviewed: Apr. 20, 2009
Tasty! I used all coconut milk, no water. Also, I didn't have any cilantro on hand, so I made it without.

Clark Gable Pancakes

Reviewed: Apr. 6, 2009
Two Tablespoons is exactly right! Those of you who have aftertaste may need to try Aluminum Free Baking Powder.... the aluminum is bad for you anyway. These pancakes were great! I walked away from the batter for a couple of minutes and when I came back the batter had doubled! Light, fluffy, delicious pancakes. They were thick enough that they weren't perfect circles, but that is just fine by me.

Chicken Pa Nang

Reviewed: Mar. 9, 2008
Make certain to use curry paste and not curry sauce. This comes in a tiny jar and is thick like school paste. Very potent, try the 1tsp first. If you'd like it spicier once the sauce is assembled, you can always blend more paste with a spoonful of the sauce, then add to the pan. this way you don't wind up with hidden chunks of paste.

Light and Creamy Brown Sugar and Chocolate Frosting

Reviewed: Jan. 23, 2008
Very light and very tasty. I doubled the recipe, because I have about 36 cupcakes, but I don't know that it was necessary as I am icing them fairly thinly. For some odd reason my vanilla is lost, so I used about 1/3 of a capful of almond extract instead. It reminds me of chocolate ice cream. So good.

Oatmeal and Wheat Flour Blueberry Pancakes

Reviewed: Oct. 30, 2004
Delicious! I used 2% milk, as it was what i had on hand. I did add vanilla, but no cinnamon. I used melted margarine instead of the olive oil, as it was also all i had. Next time I will definately use olive oil. If you use Light tasting Olive Oil, you will not get that olive oil taste in the end result. Oh, and I did use 1 cup of blueberries instead of half. My 3 year old has been getting So picky.. these were easy for her to help me make and she ate every bite :)

Simple Beef Flavored Gravy

Reviewed: Oct. 27, 2004
Tasty! I used it in shepherd's pie. A good simple beef gravy. (I don't make gravy very often and I was afraid it would never smooth out from a big lump.. but it did :) just be patient!) I used one boullion packet.

Beth's Chocolate Chip Cookies

Reviewed: Oct. 10, 2004
Perfect! This is the recipe I was looking for... not a super sweet cookie, not too flat, not too crunchy around the edges or gooey in the middle. I used about 1 1/2 c chocolate chips and added 3/4 cup white chocolate. I did use the pecans. Thank You!

Bread Pudding I

Reviewed: Oct. 8, 2004
Awesome Bread Pudding! I did not change a thing. It was moist and delicious, most of my raisins were at the bottom and formed a kind of sugary sauce. It was super moist! I used the soft italian bread from the grocery store. Cubed about half of the loaf and dried it a bit in the oven as it preheated. Yummy!

Blueberry Cornmeal Muffins

Reviewed: Sep. 14, 2004
Very tasty! My 1 year old and my picky 3 year old both gobbled them up! I used 2 cups of cornmeal mix I had on hand, eliminating all the other dry ingredients except sugar. I also added a touch of vanilla. I used oil, instead of butter, to save time. The 1st one seemed a bit dry just out of the oven, but the rest were quite moist and very filling. They were even good later in the afternoon.

Blueberry Waffles with Fast Blueberry Sauce

Reviewed: Sep. 4, 2004
Have done the opposite of many others, I have only made ther waffles, and not the sauce.. Very tasty! Much better than frozen imitation blueberry waffles! I do use frozen blueberries, rinsed and patted dry.

Chicken Cordon Bleu I

Reviewed: Sep. 1, 2004
Mine came out a bit dry, but i may have baked them too long. I served them with the Honey Mustard Dipping Sauce from this site and it was a delicious combination! My hubby has been asking me to make chicken cordon bleu for quite some time and this combination got 2 thumbs up :)

Byron's Ginger Chocolate Chip Cookies

Not what I expected, but they are very tasty... The texture is similar to that of lace cookies. The ginger added a great zip.

Buttermilk Pancakes II

Reviewed: Aug. 15, 2004
These are fabulous! I usually make pancakes with ooil instead of butter, and i never grease the griddle. I used the butter this time, but still used an ungreased griddle and they turned out just right and golden. I also use regular milk with 1 tsp vinegar for every cup, instead of buttermilk.
