Diane's German Chocolate Cake

Peanut Crunch Cake

Our 5-year-old nephew absolutely loved this cake. We left out the peanuts, which probably misses the whole point since there was no "crunch," but to the 5-year-old set, this was the "best, best, best cake ever." The adults liked it, too. Would be good even without the chocolate chips, we think.

Cheese Cake Cups

These taste great! They are not as pretty as I'd hoped, though, so they do not work well to turn out onto a dessert plate with raspberry sauce, but they are great when not for company!

Chicken Enchiladas I

This turned out realy well. We used corn tortillas rather than flour and we just layered it more like a lasagne than an enchilada, but the flavor was the same and it was a lot faster! We were all impressed with how well the cheese and sour cream brought the flavors of the dish together.

Red Enchilada Sauce

I added some cayenne to give it more of a kick. I just estimated the seasonings, and it turned out great. I also added a bullion cube rather than salt - made the flavor a bit stronger.

Spaetzle I

This was not exactly as I remember this dish served in Germany, but it was certainly tasty! We made kaesespaetzle by sauteeing some onions and then baking the noodles with some Emmentaler cheese and the onions on top - turned out GREAT! The leftover noodles were also good with stew.

I love this but no one else at home will eat it, so I scale it down to one portion. It smells a bit, too, so if you're having guests, I would not suggest cooking this dish! :)

Sweet Corn Cake

I used less butter and just ground up some corn meal for the masa harina, and it turned out great. It was meant to be for dessert, but my gang didn't want to wait! We'll definitely be makign this again. Note: Make sure to read all the directions before you start - I made the mistake of putting the mixture into a pan that would not fit into any of my other baking dishes, so I had to move it to a smaller one!

Easy Mushroom Rice

It was good, but we found this too salty even with reduced sodium broth. We used short grain rice, and I am uncertain whether that affects its saltiness.

No Bake Cheesecake II

This is not exactly a cheesecake, but that's okay because it's better - Much simpler and takes no time. Great with pineapple! Also work well to add a hint of lemon extract and top with lemon curd!

Hot Cross Buns I

My husband says that the traditional hot cross buns have a sweetened dough cross rather than an icing one, so I made a sweet dough out of an egg white, some confectioners sugar, all purpose flour and some vanilla and put it on after brusing the tops with the egg yolk mixture - turned out great! Our guests loved them and asked for the recipe!
