Oat Applesauce Muffins

For a low calorie, healthy muffin these taste great. I made a few alterations though. I used 3/4 c. all purpose flour as I didn't have whole wheat, added 1/4 c. wheat germ, and cut back a little on the sugar since I used regular sweetened applesauce. I only soaked the oats for about 45 minutes. They came out wonderfully moist and had just the right amount of sweetness. Like other reviewers I did find that 30 minutes was too long for them to bake, mine were done at around 25 minutes

Best Ever Muffins

Good base recipe, quick and easy to make. I added a teaspoon of vanilla and folded in a cup of chopped strawberries to the batter and they turned out very nice, moist, and tasty.

Dominican Style Oatmeal

Extremely tasty and easy to make. It was very creamy, had a great consistency and the spices went together nicely. I've always made my oatmeal with water; after trying this recipe I don't think I'll ever make it with water again!

Coconut Cream Pie I

Following other reviews I made the recipe with 2 small packages of instant coconut cream pudding, 1 3/4 cup of milk, and I toasted 1/4 cup of coconut to sprinkle on top. I found that with the added amount of pudding the pie overflowed slightly, so next time I make this I might add less of the pudding. I found that the 1/2 cup of coconut called for in the recipe to sprinkle on top of the pie was slightly too much; I ended up using only 1/4 cups. With the changes it was absolutely delicious and I will be making it again.

Chewy Coconut Cookies

I had some leftover coconut flakes and decided to make these since I had all the other ingredients on hand, and these are PERFECT! They have crispy edges and a soft, chewy center, and a good amount of coconut flavor. I used slightly more flour than called for in the recipe since I was worried that they might come out flat based on other reviews, and they came out fine. I will definitely be making these again.
