I made this last night and it was delicious. I did add a few things after reading others reviews. First I combined 1/4 tsp coarse salt, 1/2 tsp cracked pepper, and dried thyme. (I didn't actually measure, but that sounds right.) I rubbed this all over the meat. I had 1 small tenderloin. Next I diced two cloves of garlic and added it to a plastic bag with 1/4 cup olive oil and 1 tbsp Gray Poupon mustard, and placed the meat into marinade for 1/2 hour in the frig. I then mixed 1/2 cup bread crumbs, 1/4 cup Parmesan cheese, 1/4 tsp dried basil, oregano, onion power. Combined the garlic marinade, bread crumb mix and a little extra olive oil to make moist enough to stick to meat. Pressed all around sides, placed in a sprayed Pyrex dish with cooking spray, covered with foil, and cooked at 425 for 35-40 minutes. Came out perfect pork temperature, and let rest for 10 minutes before serving.
