Mac and Cheese II

SOOOO yummy! I made this as a side dish for a family dinner last week, but it turned into the main dish - everybody left their chicken to the side and DEVOURED this mac and cheese. Then, on New Years, when I asked what "fun food" everybody wanted me to make - this was the winner, so I made it again! The only issue was that I found it a little runny. I like a little drier mac n cheese. The second time around, I doubled the amount of macaroni, doubled the cheddar cheese and left everything else exactly the same. It's four stars as written, but five stars after I changed it!

Tater Tot Bake

This is definitely a family favorite at our house!! Additionally, when I took a job working in a college cafeteria, I suggested that we try the recipe, and I was amazed that we absolutely were not able to keep up with the line of college students that wanted it. If you're campers out there, like our family, we've also made this in a dutch oven over the camp fire and it was just as delicious.

Easy OREO Truffles

I've been making these truffles for years and I'm pretty sure my family wouldn't let me in the house at Christmastime without a tin or two in my hand. I do make a couple of changes, however. 1 package of cream cheese isn't enough. 1 1/2 packages works much better, or if you really like cheesecake, use 2 packages. I also dip them in white bark, then sprinkle the top with crushed Oreo that I saved at the beginning OR crushed Andes mints! If dipping is difficult for you, the best way is to break off the center tines of two plastic forks and use those to help you dip them. No more awkward lumps, bumps, or bare spots!!

Double Chocolate Mocha Trifle

Great recipe, but I wish I'd read everybody's reviews a little more thoroughly before making it. You definitely need to at least double the pudding mixture, it's not nearly enough. I ended up having to run back out to the store in the middle of assembly and they ended up being out of the pudding flavor I used originally and I had to switch to vanilla. That being said, if you adjust your pudding amount, you'll be very pleased!

Apple Butter Pork Loin

My family LOVED this recipe! I'm not usually a big fan of fruit/meat dishes, but this one was different and oh so very good. I actually stuck the seasoned pork and apple juice in the crockpot on low for about 7 hours, then added the apple butter mixture the last hour or so and it just fell apart. I'm going to make it again for our Christmas dinner!
