Carrot Cake Oatmeal

Used three shredded carrots and skipped raisins. Used fresh ginger. It was ok. The nuts are essential. Didn't care for warm yogurt. Still prefer apples. We ate some- very filling- but will not take time to make again.

Southern Butter Rolls

I was afraid The rolls would not rise after following instructions with cold water. I didn't read reviews until I had already mixed the dough. I used a stand mixer for a few minutes to knead and save me some time. (I was looking for a bread roll recipe that I could use every week without a lot of fuss.) My rolls did rise and they came out good, just not great enough to make this my recipe. I think most people used substitutions. Why are they called butter rolls if they don't have butter in the roll? -just curious. I refrigerated leftovers in a freezer bag and used them for PBJ the next day. They were okay. I followed the recipe except for using the stand mixer. Based on my experience making tortillas, you probably use cold water because you don't want the shortening to melt. But I'd say lukewarm is ok. I used cold. Also, mixing the salt and yeast together all at once was fine since it wasn't just sitting there, you mix everything and get started kneading. I did not proof my yeast (instant) and no problem.

Chocolate Chip Muffins

This rating is based on these criteria: Fast, easy, yummy, convenient. I have four children and if I can't make the muffins in a reasonable amount of time with what I have- I will never make them. This recipe is a keeper for us. Best straight from the oven. Use good quality chocolate, and good quality flour- it makes a difference in baking. Make sure your BP is not old and you are using powder- not soda. Also, some people were not happy because it did not meet expectations- they expected more sweetness or a thin batter, or a different taste...this is a fast recipe for chocolate chip muffins which will taste like a plain muffin with chocolate chips- not like a cake. Yes, the base is biscuit or scone like. Add vanilla if you want. I make this so I can have chocolate faster than it takes to make cookies :) I use a small ice-cream scoop and mini-muffin tin. If you want an easy snack that won't send kids into a sugar frenzy, I recommend it. If you want a chocolate cupcake- this is not it.

Tuna Noodle Casserole from Scratch

Thank you for a from scratch recipe! My son loves when I make this. It is part of our meal schedule. Very comforting. Last time I used cooked chicken instead of tuna and it was great. Versatile and easy to have the ingredients on hand.

Overnight Blueberry French Toast

The bread you use can make a big difference. I use a loaf of French bread and reduce the eggs to 8. This gives a good ratio - not too soggy. Cream cheese and blueberry amounts are personal preference but we prefer a bit less. We also skip the sauce just for time sake. I look for recipes to add to my everyday cooking and without sauce and less cheese this works well. We serve it with maple syrup.

Waffles II

Yummy Honey Mustard Dipping Sauce

We use this as a dressing for salad with a bit less mayo. I use lemon, or ACV, to thin it out. One of the easiest recipes and helps us to eat more salad.

To Die For Blueberry Muffins

Very yummy for a special occasion. Love the topping, but it falls right off the muffins when I use a regular muffin tin. I started using a popover pan. It made six tall muffins with all the crumbs piled up on top.

Homemade Flour Tortillas

I do use shortening and it comes out fine. Don't make the mistake of using water that is too hot- it makes glue. But warm water works well.

Creamy Italian Dressing I

Small is so relative a term- I think the recipe needs onion, but start with a little and maybe add if needed. I used whole garlic, two bulbs the first time, one the second. I think the onion and garlic are what makes it yummy but be careful it is not too overpowering. It benefits from being made in advanced. Work with it to your taste. This rating is not based on store dressings- I don't know any good store dressings. But it has been a great find in my house, easy and quick, a keeper!

Cilantro-Lime Dressing

I guess I should have read the reviews- you don't taste cilantro and lime as much as you expect. It is sweet. It looks pretty and you can work with it, but I probably won't make it again.

Miss Betty's Super Quick Dinner Rolls

I forced myself to make these with mayo, as I am repelled by the idea of cooking with mayo- but they were good. Quick and easy and versatile. These came in handy when dinner was ready and I realized I had no bread to serve. By the time we sat at the table and passed the dishes around the oven was beeping with fresh bread rolls. :) I'm never sure what to call them, though. They are kinda biscuit like. I scoop them with an ice cream scoop into mounds on a baking sheet. Good with shredded cheese. EXCELLENT SUBSTITUTE FOR BISQUICK if you are like me and don't buy boxed food. ( I also made my own SRFlour) * if you don't want to use mayo, you can sub an egg and get a tender, dumpling-style roll.

First, thank you for a recipe that is all from scratch! :) Second, I love this recipe, use it as often as I can- never like to use cans so I sub this in all of those recipes. It is a great base and lends well to whatever flavors you want. Just personalize the seasoning to your taste. The broth/stock is also going to affect flavor so use what you like. I sometimes use all broth- no milk- and stir in cheddar cheese... Goes great with chicken and broccoli. I also use this base with taco seasoning, mexican cheese, diced green chilies and shredded chicken for the BEST chicken enchiladas. :) This is one of my top five recipes since joining. Thanks.

Liege Belgian Waffles with Pearl Sugar

Two types of pearl sugar. You should use Belgian not Scandinavian. Belgian softens and carmelizes whereas other pearl sugar remains hard.

Honey Mustard Dressing II

A staple in my house. I don't even measure. It takes one minute and I always have the ingredients I need. Homemade dressings are always better and usually very easy to make. Never buy a bottle again!
