Grandmother's Pound Cake II

This was wonderful! I've been looking for a pound cake recipe and was delighted to find this one. After readings the reviews, which I always find helpful, I also added a teaspoon of vanilla, but may try almond extract next time. Can't wait to try it with berries and whipped cream!

Summertime Sweet Pickles

Grilled Mahi Mahi

Tonight I gave this recipe a whirl, since I wanted to do something different with mahi mahi. I had to work with what I had on hand, i.e. lime juice instead of lemon, dry Cajun seasoning instead of chiles and fresh tomatoes instead of the canned. Also, I used a cast iron pan, which was easy to transfer to the oven, because I took the advice of others and baked it at 350 for 30 minutes instead of grilling it. This not only tasted delicious, but my husband noted that it is restaurant-gorgeous once it's on the plate! Definitely a keeper.

Creamy Tomato-Basil Soup

This one was a hit with the whole family! I meant to get this review up earlier. We actually tried it a few weeks ago. What to do with all the tomatoes from our garden? I had already made lots of spaghetti sauce and we'd eaten them in salads, so it was time for something different. This also made use of our garden's fresh basil, which was also plentiful. The result is a soup that is creamy with a delicate blend of the flavors that go into it, most notably the herbs. The batch I made was gone in 2 days. Very good!

Old-Fashioned Swiss Steak

Hubby actually did this one and everyone loved it! It fills the house with an amazing aroma. He did make some changes, including marinating the meat in a baja citrus marinade for about 3 hours. Instead of canned tomatoes (which we didn't have on hand) he used 1/2 jar of spaghetti sauce. He omitted the flour and added some minced fresh garlic. The result was restaurant quality and we're adding this to our Christmas dinner menu!

Pasta Salad

For a long time I've tried to find a pasta recipe that was a keeper. Happy to say, the search is now over! I did make a couple changes, using only about half the bottle of dressing and augmenting with some splashes of extra virgin olive oil. Also, I only used a yellow bell pepper and one package of the seasoning mix, and I also added some feta cheese. It was a hit at our Fourth of July party!

Apple Cake I

Really, I want to give this recipe 4 1/2 stars! Like others suggested, I could have gotten away with cutting some of the sugar and substituting 1/2 the oil with unsweetened applesauce. Definitely do not skimp on the apples; they may look like a lot while you're pouring the batter in the pan, but it's absolutely the right amount when you bring it out of the oven! Partway through I realized I only had about half of what was needed of the flour left in my pantry, so I substituted 3/4 cup of whole wheat flour for the other half. (And it didn't detract from the flavor at all.) Other than that, this is a delicious cake that could star as both dessert and breakfast.

Golden Sweet Cornbread

This is, by far, my favorite recipe for cornbread. I've been making it for a while now, and it is always welcomed at the dinner table. Tastes like a delicious corn muffin for breakfast, too. This is one of those recipes that I have never varied, making it exactly according to the directions. Easy to make and comes out perfectly every time.

Cranberry Sauce Extraordinaire

One of the best cranberry sauce recipes I've found! This is so delicious. It tastes like the filling of a pie, and it's just the right texture. Being that it was a recipe I grabbed at the last moment, I used none of the fruit other than the cranberries themselves, and it was still amazing. Next time I make it, I'll be adding the apple and the pear, for certain. Also, I used slightly less sugar. This dish not only is yummy and pretty on your Thanksgiving table, but it also makes great preserves on English muffins for breakfast!

Lana's Sweet and Sour Meatballs

This was so delicious! Made it for a family party recently and cooked it in the Crockpot. By the end of the evening there was nothing left. I'm wondering how well the sauce--which is as good as other people said it would be--would go with shredded beef? Have to give it a go! And I made it with meatballs from scratch. Very yummy.

Cod in Tomatoes with Wine

Made this tonight for a husband who doesn't like fish, and even he enjoyed the cod! I didn't have prawns and just made it as the recipe called for, though next time I'll use olive oil instead of vegetable. Also, I substituted a couple dashes of red cayenne for the red chili pepper, so it still had a kid. Excellent & will make this again.

Easy Pea Salad

Since I wanted something different as a side for tonight, whipped this up quickly before work this morning. The only dressing I had on hand was Thousand Island, and I used white instead of sweet onion. Also didn't have chunks of cheddar, so I used some shredded instead. Very nice! I'll have to make this for our next gathering at church or work.

Snow Ice Cream II

I made a lot less of it (hubby didn't want to try it and it was only me), so I added the ingredients little by little to about a cup of snow, watching the consistency and sweetness. Was surprisingly yummy!

Smooth Sweet Tea

I've tried other recipes and still you could taste a residue of bitterness. This version is now the only one I'll use. Tastes as good, in fact better, than the one served in many restaurants.
