Week Two on a Low Carb Diet

This marks week two on my low carb quest.  This week I can have 20 carbs and I am so grateful.  I've been missing my veggies so I'm excited to add them back to my diet gradually.  Last week, I lost 7 lbs cutting down the carbs so I intend to closely monitor it and hopefully find some great recipe options.

Good for you! Could you tell us a bit more? What kind of low carb diet? How does it work? What does 20 carbs even mean? I'd love to hear about it!

I am so impressed with folks embarking on weight loss over the holidays- you are an inspiration, Christina! I am thinking she means eating no more than 20 grams of carbohydrate per day. Of course, carbohydrates are an important source of energy (calories) and eating too many carbohydrates means your body stores the extra as fat. It is the KIND of carbohydrate that is important. Simple carbs like sugar don't provide any health benefits. Complex carbohydrates are high fiber foods like dried beans and vegetables and fruits, and whole grains. Of course, when you choose high-fiber, complex-carb *vegetables*, not only does that fiber help your stomach feel full longer, but you also get vitally important vitamins that help your body fight off diseases that also help your body lock up the free-radicals and purge them from your body. And then there's the added benefit of all that dietary fiber to your intestines :) When you eat high fiber foods like veggies, your intestines are like a full tube of toothpaste, it's.. um... really easy to squeeze the toothpaste out of a full tube. But if you are NOT eating high fiber foods, your intestines can be like an almost empty tube of toothpaste- you have to squeeze it this way and twist it that way just to get a little bit of ...toothpaste...to come out and that is never fun. High fiber veggies are a good carbohydrate. God knows there are things I need to skip eating this season (hmmm... cookies, cakes, pies, fudge, candy) but veggies sure aren't one of them... ;) Keep up the great work, Christina! I'll be doing low-fat cheese and grapes and veggies instead of the treats today in honor of you. :)
