Curried Butternut Squash and Pear Soup

Made this recipe again last night. I love it everytime. I again half a block of cream cheese at the end instead of half and half. It was just as good. Except if I add cream cheese next time I will run it through the blender because it took forever to melt.

Broccoli Rabe with Portobello Mushroom

Used baby bellas instead and added red pepper. Definitely a fun, delicious combination to go with broccoli rabe. I liked it better than the plain garlic and olive oil version.

Tasty Fried Eggplant Balls

My boyfriend took one bite and said this was the most delicious thing he ever tasted! It's definitely worth the preparation. I followed the recipes exactly, except used yellow bell instead of green. Fried them in medium hot vegetable oil until they were golden brown. There were layers of flavor unlike anything I've ever had before. Delicious!

Banana Banana Bread

I don't have alot of experience baking different banana breads. But this one uses 5 overripe bananas so it is useful. It is very moist and not much sugar. I love to toast a piece... it doesn't even need butter.

Crispy Rosemary Chicken and Fries

This is one of our regulars. We love to use fresh herbs from the garden. I replace the oregano with fresh basil. I slice the potatoes so they come out crispier and sometimes add carrots to the mixture.

Slow Cooker Pulled Pork

We made this with a 5 lb package of pork butt (boston butt) sliced. I sliced an onion, thick slices and layered on the bottom of the slow cooker. Used one can of coke, one can of cream soda, and a cup of BBQ sauce (no root beer in the house), cooked on low for 10 hours. Then drained, shredded, and added 3/4 bottle of Kraft BBQ sauce. My boyfriend and I both loved it and decided we would add it to our "company recipes". Easy and Delicious!

Feta Chicken Salad

I used diced cucumber instead of celery and red pepper. I also used lots of fresh basil and parsley from the garden instead of the dill. They made tasty sandwiches for lunch. Both my boyfriend and I enjoyed them. I wrote down the recipe for my book. Will definitely be making again.

Raspberry Squares II

Had to find a use for some jam I made that was too thick. Didn't use the walnuts, added 1/4 c oats instead. Added 1/4 c chopped almonds to the reserved mixture for the top. They came out delicious, everyone loved them.

Banana Pudding with Meringue

This dessert was okay. Definitely not one of my favorites. It was alittle too sweet. It took about 30 minutes to get the pudding mixture to thicken.
