Marinated Grilled Shrimp

Great recipe! I used a can of diced tomatoes (as others suggested) blended with the other ingredients. These turned out amazing! My BF was so impressed that we just made them for a second time in a week.

Six Can Chicken Tortilla Soup

I can't believe I haven't rated this yet (been making it since 2002)! This is a great quick soup, I usually keep the ingredients on hand. I cut up a chicken breast and put it in to cook before most of the other ingredients, and use rotel. Perfect on a chilly day!

Quick Italian Vegetable Soup

I've been making this for a couple of years, love it! When I want a heartier soup I add beans and potatoes. When I want to eat light, I make a large batch with just veggies and eat it all week long. I sometimes add cajun seasoning to my bowl when I want to mix it up a bit.

Tastes great, and like one reviewer said only one pot dish. I only had hot Italian sausage on hand so used that. Will definitely make it often!

Foolproof Rib Roast

I had planned on making a pot roast in the crock pot, but my friends told me that I got way too good a cut of roast to do that with. I checked on here and this recipe works great! I rubbed the roast with olive oil and a salt/pepper/rosemary/time/sage mixture. Turned out perfectly medium rare ans smelt wonderful! I used a suggestion to put beef stock in the bottom of the roasting pan and used a little red wine instead of beer. Thickened the drippings and added them to the veggies and gravy cooking in the crock pot. The only thing I had forgotten was some bread or rolls to sop up the gravy.

Southern Green Beans

This is wonderful - tastes just like my Aunt makes (although she uses fresh from the garden!). I used white onion (didn't have red), extra chicken stock, and simmered longer. My BF didn't seem to appreciate it as much as I did, but there's no accounting for Northern taste. :)

Easy Vodka Sauce

Meatballs with Mushroom Sauce

Great recipe...I needed something different to make with ground beef, and this is it! I added a can of beef gravy just because we like a lot of gravy with mashed potatoes. I'll certainly be making this often

Herb Roasted Pork

Excellent! I've had a 4lb pork loin in the freezer for I don't know how long and finally had to cook it due to a power outage. I thought the sauce ended up looking like molasses, but it tasted great! I added potatoes and carrots in the last 1/2 hour and it all tasted great. Don't think the kids will eat it strictly because it's pork (silly kids)...looks like I'll be having it for lunch all week!

Creole Tuna

So easy and fast! I only had Rotel, so used that instead of tomatoes - boy was it hot! Next time I'll definately stick to regular tomatoes (or mild Rotel). The kids probably wouldn't touch it, but it's perfect for a quick meal for myself.

Boudreaux's Zydeco Stomp Gumbo

INCREDIBLE! I have been making this for a couple of years and someone always asks for the recipe. This time I used Rotel and Andoulle sausage...I'm waiting for the rice to cook right now, and have already had a bowl of gumbo without it. 02/04/12 Update: I've made this many times and have started adding okra (personal taste). I always get requests from friends for me to make it. Heaven forbid if I make it and neglect to save them some! I have burned the rue a time or two over the years and had to start over...just remember to cook it slowly and constantly stir it, a good rue makes all the difference!

Cream of Asparagus Soup I

Wonderfull! Of course the kids wouldn't eat it, they don't mind asparugus, but this was pushing it! I used 2 potatoes, chicken bullion and water, and did without the half & half and soy sauce.

Hearty Ham Casserole

Fast, good,an easy cleanup, and the kids loved it! I used a can of cream of mushroom soup, milk, and cheddar cheese on top. I've made before using leftover ham, but today I bought an inexpensive ham just for this-as well as freezing it for other meals.

Corn Chowder IV

Incredibly easy and good! As I was making it, I thought it would be bland because I wasn't adding any spices, but it turned out great! the only cheese I had on hand was grated cheddar, so used that. Next time I'll try the Campbell's cheese. I've added another comfort food to my list of favorites!

Wild Rice And Chicken Soup

Chili I

Like this one needs another review! I used half the brown sugar as suggested, added a green and a red pepper, and skipped the hot peppers. It was still pretty spicy! My 12 yo daughter prefers my chili,(which is basically spaghetti sauce with chili powder and beans)that just means that I get this all to myself!!! The last time I made it for the folks at work, and they all raved about it!

Primo Spaghetti Sauce

I've made this twice, both with ground beef and it is fantastic! I used to use a bunch of spices in my sauce, but lately have been sticking to the basics. One of these days I'll get around to making it with the spicy sausage!
