Simon and Garfunkel Pot Roast

I really enjoyed this recipe although I made a few modifications. The spices added a lot of flavor but wasn't overpowering. I mixed all of the herbs with the oil and spread it on the roast. I then seared the roast on all sides to lock in the flavor (got the idea from Marie's pot roast recipe). Then I added the roasted to the liquid ingredients in addition to a sliced onion and some garlic cloves. Once it was cooked I made some of the juices into gravy. Delish!

Marinated Flank Steak

We really enjoyed this. I marinated for two days and used red wine instead of the vinegar because it was what I had on hand. I'm going to make e left overs into fajitas with peppers and onions. I will definitely be making this again.

French Ham Cheese and Egg Fondue Casserole

We enjoyed this casserole. I made a few variations and baked it 90 minutes after I assembled it and it tasted great. I used 1 1/2 cups evaporated milk and 1 1/2 cups water because I was out of milk. I also added diced onions and diced bell peppers for some veggies and extra flavor. I used a Mexican cheese blend and it was tasty. I'll definitely be making this on a more regular basis.

Sausage and Egg Casserole

We really liked this recipe especially with the pork sausage. It gives it great flavor. I added a few things: sun dried tomato & basil seasoning to add taste and scallions & roasted red pepper slices for some veggie component. You could substitute many different veggies based on what you have on hand. I just thought it needed a nutritional kick. I also used focaccia bread that was going stale instead of the white bread. This will be a go to for me when I'm looking for a brunch or even dinner recipe. Thanks!

Beef Barley Soup

I made this with the left over meat from Campbell's Weekday Pot Roast and Vegetables. I made quite a few substitutions to avoid a trip to the grocery store. 1) 1 cup left over gravy from previous recipe plus 3 cups water instead of beef broth. 2) approximate 3/4 cup salsa and 3/4 cup marinara for the diced tomatoes 3) corn instead of peas. It turned out great had had a little kick b/c of the salsa. I'll probably add the peas next time so there's more green in the soup. I also served with a bit of chopped scallions- the green part. Thanks for the recipe this will be a family favorite.

Weekday Pot Roast and Vegetables

Very good and easy to throw in the crockpot. I added a bit of water so that i wouldnt risk burning dinner. I used the left overs in the Beef Barley soup by Taste of Home.

Szechwan Shrimp

A very good meal. I paired this with couscous (because rice would have taken too long). I also stir fried sliced carrots, snow peas, peppers and spinach. I recommend doubling the sauce and making it ahead of time. This will be a go to recipe for me.

Cuban Ropa Vieja

Good flavor. I used a chuck roast because flank steak in the crackpot doesn't seem right to me. I also used crushed tomatoes instead of tomato sauce because it was all I had. We enjoyed the leftovers as shredded beef tacos.

Baked Coconut Shrimp

Delish! I let the shrimp sit in buttermilk for a bit then dredged as directed. I added Panko breadcrumbs with the coconut as my hubby isn't crazy about coconut. It made them light and crispy. I served with Franks red hot sweet chili sauce. This is a repeat for sure!

Baked Oatmeal II

Very good. I did 1/4 cup oil & 1/4 cup butter. I also added 1/4c pecans, 2 tbsp flax seed and about 1/2c blueberries. It turned out great!

Easy Sugar Cookies

These are a good, basic sugar cookie. I took these and baked them in a mini muffin pan for 8-9 minutes. Once cooled I filled them with a mixture of equal parts plain yogurt & peach jam (~1 tsp each) then topped the cookie with homemade whipped cream. (I recommend Alton Brown's whipped cream recipe) Delish!

Mom's Fabulous Chicken Pot Pie with Biscuit Crust

We enjoyed this. I didn't have an onion on hand so I substituted 1 tablespoon of onion flakes. I think I would have enjoyed it more with the onion. I was out of peas so I used 1/3 c corn and 1/3 c green peppers. I'll be making this again with leftover chicken. I might add some garlic like another reviewer suggested.

Rhubarb Strawberry Crunch

This dessert was tasty. I followed the recommendation and put the crunch crust only on the top. I only had 2 cups of rhubarb so I used 4 cups of strawberries with it. WARNING: it will overflow with juice if you use that many strawberries. The strawberries had too much liquid and made a mess of my mother-in-law's oven.
