Eggless Chocolate Cake II

Reviewed: Jun. 22, 2011
I'm sorry but this just wasn't what I was expecting. This is the first eggless cake I have ever made, and I wont be making it again. I baked following the recipe, but it did not have the richness or moisture I was wanting. The center did not completely bake while the edges were burning after one hour in the oven. Perhaps if I had halved the recipe it would have baked better, or if I had done cupcakes, but still the flavour was lacking and I doubt I will make it again.

Banana and Peanut Butter Pancakes

Reviewed: Mar. 18, 2011
Absolutely DELICIOUS! I doubled the recipe right off the bat so I would have leftovers to freeze. The only thing different that I did, was first mash the bananas, not chopped, and blended them with 1 cup milk that I held back from the recipe, this gave a very smooth texture, next time I may blend the PB too. Thank you for an excellent and so so simple recipe!

Butterhorn Rolls

Reviewed: Jun. 8, 2011
Yummy! I made a couple changes...very small ones! I have two small children and could hardly find the time to roll it out, spread butter, cut into triangles, and roll up. So I just rolled the dough in my hands into mini bun shapes and placed on pan. Then I only baked at 375 for about 6-7 mins. Baked just wonderful that way too. Nice, light and airy! Thank you for a great recipe!

Dumpling Soup

Good, simple soup. Recipe is easy to follow. I added much more bacon to mine, and had to add some spices. Next time I may put some veggies in, and there will definitly be a next time that I make this soup, with my own variatons.

Banana Sour Cream Bread

Reviewed: Jun. 9, 2011
The best banana bread I have had in a long time! I had way too many bananas and was weary of making MORE banana bread, but this recipe was definitly worth doing. So moist and delicious! I even stuck a loaf in the freezer for a couple months, and brought it too my mothers house for a family gathering....it was a huge hit, still tasted like fresh! Thank you Esther, this is the only banana bread recipe I will ever use from now on!

Apple Pie

Reviewed: Jun. 8, 2011
ABSOLUTELY DELICIOUS!!! This is the same recipe I have been using for a couple years now. The only difference was the baking times and temps. I have found many recipes using two different temps to bake at, but the higher temp always came first. I like this better. I would recommend putting foil on the edges of the pie for the first part of baking, then remove when you turn up the oven, it prevents the crust from getting too dark on the edges. Also, as another side note, this pie freezes very well, you'll just have to bake it a lil longer when going from frozen.

Winter Squash Rolls

Reviewed: Sep. 23, 2012
Wonderful! I was given two butternut squash this fall, and had no idea what to do with them! While I do enjoy it simply baked, there was no way I wanted to eat them both that way! This solved my dilemma, and I plan to make some to take to my family's Christmas gathering, I'm sure everyone will love them!

Alfredo Sauce

Reviewed: Jul. 19, 2011
Wish there was a ten star option! Its a great recipe. I did a lil over a quarter cup margarine, one can of evaporated milk, then followed the rest of the recipe. Oh, I like my sauces thick so I added a bit of flour, which I wouldnt have needed to! The recipe is just great the way it is! THank you for such a simple sauce recipe I can make with a toddler and an infant in the kitchen with me.

Fluffy Carrot Muffins with Cream Cheese Frosting

Reviewed: Feb. 6, 2011
Absolutely wonderful! I had a couple carrots left over, and wasn't sure what to do with them. Most other recipes required pineapple or applesauce. This very simple and delicious recipe was just what I needed! I subbed out the oil, for melted margarine, and added a bit of nutmeg. Yummy!
