Buffalo Chicken Dip

Delicious recipe! Instead of Frank's Red Hot, I used Sriracha. My uncle is picky when it comes to hot sauces and he said that next I HAVE to make it with Frank's, but for me the sriracha added a more complex flavor to the dip! I served the dip in my fondue pot to keep it warm throughout the football game :) If you don't have a fondue pot, it's a great investment! Don't only have to serve fondue, but dips and even soups work well with it.

Meringue Cookies

delicious recipe...just ran out of vanilla so i simply beat the egg whites and sugar together and it turned out perfectly! Def. a sound recipe for meringue!

Chicken Cordon Bleu II

Great, great, great recipe! I never made fresh cordon bleu before and it was A-M-A-Z-I-N-G! I hammered the chicken breasts to thin them out and then salted them with sea salt and parsley flakes/fresh-ground pepper. I also added a dash or two of Maggi and some whole peppercorns to the sauce! One of my favorite recipes from the site!

Oven Roasted Potatoes

Great recipe :)I was a little disappointed that when they came out of the oven they weren't very crispy. I cooked them for 30 min. and they were a little too raw still. I also added half a teaspoon of cayenne pepper to the mixture. Overall, very sound side dish :)

Baked Potato Soup

Delicious soup!!! I made a few changes however...First, I added two cloves of garlic instead of one. I also doubled the bacon! My family loves bacon so I pan fried four strips of bacon diced and then added it to the soup while it was boiling. I cut an additional three slices of bacon to garnish. (I also lean towards thicker soups) I followed a previous comment's advice and added four tablespoons of flour. I added a pinch of paprika as well. IF YOU HAVE MAGGI I STRONGLY ADVISE ADDING IT! It adds a wonderful smokey flavor to the soup :) A must have in my house! I also melted a little of the cheddar cheese in with the soup as well as some parmesan. Overall I loved the soup and my family couldn't get enough! OH also instead of typical hot pepper sauce I substituted Sriracha hot chili sauce! Try it you won't be disappointed!

Pickled Red Beet Eggs

Very good recipe! I added about 7 whole cloves to the beet juice mixture while it was boiling. I also reduced the sugar by about a tablespoon or two (I prefer more sour). Add about half a tablespoon of salt more :) Overall good, sound recipe.

Coconut Macaroons III

First time attempting to make macaroons was a bit of a failure. I kept burning the bottoms!! I used cookie sheets wrapped with aluminum foil, but it failed for both batches I made! The top part, however, was toasted to perfection and my entire family kept picking at them. I personally found them to be incredibly sweet and perhaps a little heavy on the condensed milk. Then again, this was my first time making them...anyone who is planning to make these, don't forget to dip them in milk/white chocolate!

Goldenrod Eggs

First time ever to try Goldenrod style eggs...I messed up the first batch by burning the flour (let it sit too long in the pan, I'm still new at this :P) and had only about a tablespoon of butter left to make three servings. It turned out chunky but super delicious! I took the advice of a previous comment and sprinkled red pepper flakes on top of the mixture. I also added some cracked black pepper for both look and taste! I personally like onion powder or garlic powder mixed in with my scrambled eggs and I plan on adding a dash or two next time to this recipe. Overall a deliciously simple treat for the morning hours or evening hours if you're like me!

American Potato Salad

Good, but I felt like the potatoes got lost in the mayo. A little less perhaps? Try adding diced pickles...adds a slight sour crunch...nice addition to the overall texture.

Rico's Passionate Pink Honey Lemonade

I made this for a picnic and got great reviews! It was delicious and reminded me of pink cotton candy. I added more fresh strawberries, about double the amount. It still turned out fabulous and had more of a strawberry taste to it!

Easy OREO Truffles

I made these for my boyfriend and they were, as the recipe suggested, very easy to make. The taste, however, was less than satisfying for me (my boyfriend is easy to please in the food department). The taste of the truffle was not impressive. I expected to taste more oreo, but I felt the cookie was completely lost in the recipe.

Glenn's Blowing Rock Salmon

I had high expectations for this dish...and it delivered!!! My boyfriend was wowed by the presentation of the salmon and even more impressed by the taste. The cut of salmon I purchased was a bit too thick, masking the flavor of the crab. I also sliced the gouda too thinly, making it almost non-existant in the dish. I was afraid the cheese would override the flavor of both the salmon and crab. The dill sauce turned out phenomenal! I added a little more dill then called for, because I love dill((about three tablespoons))! I also doubled the lemon butter sauce and really coated the fillets((only made 2 fillets))! This recipe is definently a keeper!!! Can't wait to make it again!

Ginger Scallops

I messed up the recipe with the amount of wine used, so I tried to counter balance it with more cream. It turned out quite soupy and a color that was quite unappealing! Even though they looked unappetizing, they tasted really nice! My boyfriend may have just been being sweet ((valentine's day)) but he said they were one of the best he has had. I'm sure if I had made them closer to the recipe they would have been phenomenal! I also added some flour to thicken the sauce...helped salvage what I messed up in the first place!

Spinach Tomato Tortellini

Def. a sound recipe! The color did turn out to be a bit pink, however that didn't bother my boyfriend or myself. I would suggest adding more spinach than called for, it seems to get lost in the pasta otherwise. ((used one bunch myself, and it still seemed a tad little)) I did a combination of cheese stuffed ravioli and farfalle which turned out to be a winner. ((Im in china right now and I swear there is no tortellini here!!)) I also chopped up some fresh tomatoes to throw in! Made the flavor more intense. I also used fresh basil which made the dish come alive, used two tablespoons however. ((love basil)). More garlic could have been used as well ((used 5 cloves)) :) Overall it was a great and easy dish!
