Mediterranean Potato Salad

Made for Memorial Day meal and everyone loved it! I did add sliced grape tomatoes and made my dressing from the dry package of Zesty Italian. I want to next time add some real bacon bits and perhaps sliced black olives. This is definitely a keeper.

I also add some chicken broth. I like thing like this if it is cooked for me. But my kids wasn't to enthusiastic about it.

Spinach Quiche

Even my kids loved this recipe. I did use a pie shell and used ricotta cheese instead of cottage cheese. I also happen to have mushrooms on hand so why not! I will experiment with more ingredients next time.

April's Chicken Fried Rice

I too had to put my own spin on this since I rarely follow an exact recipe. I did cook my rice the day before like others. I also put about 1/4 cup of frozen mixed vegetables and chopped bell pepper in skillet as the chicken was finishing cooking. We also like more soy sauce. Like someone else said there is not really a wrong way to cook this. I had planned to post a picture but my kids had it eat up before I could get one!

Cranberry Sauce

I made this last night so that my family may enjoy for Thanksgiving tomorrow. But. . . I may have to make more :) This is so good and easy to make. I let mine slow boil for about 15 minutes. The last 5 minutes I added approx. 1/4 cup of Ginger brandy and after cooking I removed from the heat and added grated orange rind. It will thicken as it cools. I too will never buy store stuff again.. Thanks for the recipe.

Buttermilk Pie

I too used cinnamon and I will cut back on the amount next time. I also cut back on the sugar. It was alittle to sweet for me. But my son loved it. I will make again though.

Tortellini Bacon Broccoli Salad

Excellent... I have made several times and it's always a hit.. I did decide not to buy the cole slaw dressing (to expensive) but made my own using mayo, sugar, cider vinegar and pepper. I have also made adding dried cranberries and shredded cheddar cheese. I too bought the pre-cooked bacon. This is a great crowd pleaser...

Meatloaf that Doesn't Crumble

My kids love meatloaf and I love sandwiches using the leftovers. Instead of the crackers I use 1 cup of dry oatmeal. This is a good way to hide some veggies if you have picky kids.

Delicious Ham and Potato Soup

I had leftover peppered ham from Christmas and decided to make this. My family loved it. I did add some chopped carrots and celery then used broth instead of granules. I let them salt to their taste. Topped with shredded cheese. After all the snow we got on Christmas this soup was nice warm and hearty. I will make this again. Thanks Chad.

Cadillac Pimento Cheese

Banana-Dulce de Leche Pie (Banana-Caramel Pie)

This is an excellent pie although I cheated - just buy a graham cracker crust. Also, in the mexican food section in the store you can get a can of the carmel. I sat the can into hot water for awhile just to soften abit before pouring over the bananas. Put in refrigerator for at least an hour. Added the Cool whip before serving and what a treat this is. Everyone loved it. So simple to make

Party-Size Greek Couscous Salad

When they say "Party-size" they are not joking.. I made this and took to the lake for Memorial Day. We had 17 people and I still had left overs to take to work on Tues. I did add many more Tomatoes, feta cheese and 1 bottle of salad dressing. This is a very nice cool summer salad. I believe next time I'll only use 1 box of Couscous! By the time you add all the other ingredients it should feed plenty.. Very good.

A girl at work brought this today, it is wonderful.. I plan to make soon. I believe I will try afew choc chips or dry cranberries in the cream cheese mixture. Really good and simple a must to try...

Rainbow Clown Cake

Very fun & good. I made for a 26 yr old funky kinda girl (daughter) and she loved it. So did everyone else. I only used 4 colors and found the gel food color at Hobby Lobby. Now everyone want's this cake for their BD...
