Heide's Kentucky Derby Pie

This is an excellent soup. After making it and letting it cook a full day I tasted it. It seemed to lack something so I added 1/2 can of tomato paste to it to strengthen the tomato taste and now it's perfect. We couldn't get enough of this wonderful recipe.

Cranberry Nut Bread

Outstanding recipe. The only thing I did differently is that I put some sugar in a ziplock bag and put the cranberries in to coat them a little because the first time I made this the cranberries were a little too tart.

Cheddar Bacon Hamburgers

Fabulous burger! I put the burgers on my home made hamburger buns (which are strong enough to contain a juicy burger like this one). It takes a little more prep but the extra time is well worth the effort. I followed the recipe exactly including the horseradish and I wouldn't change a thing. The burger didn't even need condiments.

Anise Biscotti

This is absolutely the very best Biscotti recipe. I made it exactly as written and I get raves. I can't keep them around and coffee shops want them. I'm going to try them with Kahlua instead of brandy to see if I get more of a coffee flavor but that's just for variety.

Cranberry Pistachio Biscotti

I was very disappointed in this recipe given how many rave reviews there were. I use the anise almond biscotti recipe on this website that uses butter and just added pistachios & cranberries instead of almonds and anise seed. Works perfectly and tastes great!

Lemon Cream Cupcakes

Not what I would necessarily call a "lemon" cupcake because there was only a very slight hint of lemon flavor however the texture and the taste were wonderful. Next time I'll try using some lemon extract because I really wanted a strong lemon flavor.

To Die For Blueberry Muffins

I made these muffins just as the recipe called for and even though they turned out good they weren't outstanding and I probably wouldn't make them again leaving the recipe as-is. I used others suggestions and added vanilla. I also added 1/4 teas. cinnamon to the batter and upped the sugar to a heaping 3/4 cup. I also added an additional 1/4 teas. salt. These additions were all the recipe needed to make it outstanding. Next time I'll try using brown sugar instead of white sugar.

Pumpkin Cake III

Wonderful cake. Not quite enough at this scale to make a high cake in that size pan. I scaled it for 18 servings and it's just right. I used the whipped cream cream cheese frosting on this website and added about 1 teas. of cinnamon to the frosting. FABULOUS!!

Banana Sour Cream Bread

Wonderful> I especially liked the sugar & cinnamon mixture inside the pan before you put the batter in. This was a huge hit. It took longer to bake though. I used pecans instead of walnuts.

Wonderful recipe! I tried it with 3 different liqueurs: Rum, Cream de Cacao, & Kahlua. My family & others choose the Rum to be the best. I also doubled the coffee/liqueur mixture and found it to be better. I tried it with home made lady fingers and store bought(soft) and prefer the store bought. Next time I'll try the firmer ladyfingers. I also used espresso rather than strong coffee with better results. I agree that bringing the mascarpone to room temp makes it easier to mix with the egg mixture.

The Whole Jar of Peanut Butter Cookies

This is a wonderful recipe. I followed the instructions to the letter including adding the chopped peanuts (rather than using chunky like others suggested). Jackie is correct when she recommends that you NOT overbake these cookies. I accidentally left a sheet in the oven a little longer and they were pretty dry.

Pecan Pie Muffins

Why only 5 stars??? This is a wonderful recipe. I used others suggestions to not use papers in my muffin pan. I used Pam & dusted with sugar. I made some this morning to take to work and they were gone as soon as I entered the office. I wouldn't change a thing. If you made them as full size muffins they might be too rich. With the mini muffin size you can almost pretend that there are no calories...almost!
