Bruschetta Chicken Bake
This recipe is SO good! I made it last night for my family and there were no leftovers! I did tweak it a little though. I sliced the chicken into strips and then cut in half so that they are about 3" long. Then I cooked the chicken in a pan over the stove (I added a little bit of olive oil to the pan). I added Mrs. Dash seasoning and pepper to taste (I did not add ANY salt to the recipe at all as I thought it would already be salty from the stuffing...I was right). After putting on the cheese and Italian seasoning I also added Oregano and Basil (Honestly, I just covered it with seasoning as I love it...so no measurements were taken). I used a box of whole wheat chicken flavored stuffing (5oz) then added a drizzle of olive oil in the stuffing mix, 3/4 medium red onion, a TBS of Balsamic vinaigrette, and 3 fresh tomatoes instead of the canned (tin-canned tomatos aren't good for you as the acid makes BPA enter food more quickly and tin cans have that toxic chemical in them). I baked and then 15 minutes before it was done, I topped it with fresh Parmesan cheese along with grated Parmesan cheese. The only thing I might change or add next time is doing one less tomato and replace it with sun-dried tomatoes. Seriously, this was SO DELICIOUS....my new signature dish.

Braised Balsamic Chicken
It was good but I felt like it needed more flavor. I'm not sure what else I could have put in it as I added artichoke hearts as well as mushrooms (I think it could have had asparagus with it but it wouldn't have added to the flavor much). I topped the mixture on whole wheat spaghetti (I also cubed the chicken). Maybe I'm just one of those individuals who really needs a huge flavor difference than just it tasting mostly like chicken. Don't get me wrong, it is good though. I especially like that it is low calorie and low in fat.
