Beef Tenderloin in a Port Shiitake Reduction

Central American Tacos

I liked this recipe. If you are looking for spice, this isn't it. I had lots of avocado sause left and it didn't turn brown after a few days in the refrigerator. I did use my food chopper as the blender didn't work for me. I added some lime juice to sause.

Black Bean, Sausage, and Sweet Potato Soup

My husband lifted the lid and frowned. He really liked after eating. Topped with sour cream. This was wonderful. I cut the recipe in half, but it only made 2 servings really.

This is fun to make and a hit with my family. I made it Greek style on one half by putting oregano, crumbled feta and sliced kalamata olives on it. The original recipe however, is fantastic!

Easier Chicken Marsala

This is a great recipe. I only used two chicken breasts (pounded) and doubled the mushrooms and wine. Removed the breasts while mushrooms cooked and then added them back in. I suggest seasoning the pounded chicken breasts first and then dredge in flour. When I put it in the plastic bag, my seasonings weren't evenly distributed. Oregano and marsala are great together.

Quick and Easy Pizza Crust

This worked great for me. I made it in my kitchen aid and left the dough in there covered, until i was ready to use it. (about an hour) My pizza stone was perfect for this.

Artichoke Chicken

I used half sour cream and half mayo as others suggested. I think I will use all mayo next time. My husband does not like artichokes, but he raved about this dish. pounded the thick parts of the chicken to cook more evenly.

This was a great alternative to my usual baked fish. Used mayo instead of egg white. I think I would season the fish a bit first next time. I want to try on halibut next!

Tres Leches (Milk Cake)

I doubled this recipe for a baby shower and was very nervous about all the milk. It soaked up pretty well and was a hit. It had a sponge like texture which I really liked. My daughter says this is the only cake she wants for her birthdays!

Asparagus and Smoked Salmon Salad

I used high quality smoked salmon from Alaska and thought it was wonderful. I am going to add a little more dressing as it was a bit dry. I had leftovers for breakfast with goddess dressing. Thanks for a great recipe for that leftover smoked salmon!
