Mascarpone Mashed Potatoes
Made these for Thanksgiving and they were so good and so easy!! Used Yukon Gold potatoes (because had them already) and only used one stick of butter (instead of two) based on the other reviews. The dish far exceeded the effort and everyone loved it. I made this the night before, up until the point of cooking it - and just set it out about an hour before putting into the oven. I cooked it a total of 25 minutes (just because I got busy) and the extra time was fine. I used my convection oven and had planned to use the broiler to get the peaks to brown, but they browned on their own without the broiler. I didn't have an extra 9x11 dish so I used a Pyrex oblong glass dish that is approx. 8x11x2.5 and it worked perfect. This will be a go-to side for many occasions and potlucks to come!

Tropical Delight Punch
This is a great punch that can be made ahead of time, and so simple and easy that more can be made during a party on the fly if needed! CORRECTION is needed for the ingredients list. It says to use a 64 oz bottle of pineapple juice...but it should be listed as 46 oz of juice. The ratio should be 3 parts juice to 1 part coconut rum. I made this with 46 oz juice and 1.5 cups coconut rum so we would have a low alchohol drink for our occasional drinkers/social drinkers. If you are making this for a "party" crowd, go ahead and use the 3:1 ratio, which would be 46 oz juice and 2 cups coconut rum. For hard-core drinkers, just leave the cocunut rum bottle out and they can pour extra rum into their drink. Delicious!

Chili II
Yeah! I have finally found a chili recipe that is super simple to prepare, and tastes great! I followed the recipe, with a couple of minor adjustments. I used 1 1/2 lbs ground beef (instead of 2 pounds - I like a soupier chili). I used 1 can dark and 1 can light kidney beans undrained (instead of the chili beans, b/c that's what I had on hand). I didn't use the 10 oz can of tomatoes w/green chili peppers (forgot it). And used 2 packages of chili seasoning mix (instead of 1 package). This tasted great, and I will definitely make this chili again!
