Tropical Delight Punch
This is a great punch that can be made ahead of time, and so simple and easy that more can be made during a party on the fly if needed! CORRECTION is needed for the ingredients list. It says to use a 64 oz bottle of pineapple juice...but it should be listed as 46 oz of juice. The ratio should be 3 parts juice to 1 part coconut rum. I made this with 46 oz juice and 1.5 cups coconut rum so we would have a low alchohol drink for our occasional drinkers/social drinkers. If you are making this for a "party" crowd, go ahead and use the 3:1 ratio, which would be 46 oz juice and 2 cups coconut rum. For hard-core drinkers, just leave the cocunut rum bottle out and they can pour extra rum into their drink. Delicious!

Chili II
Yeah! I have finally found a chili recipe that is super simple to prepare, and tastes great! I followed the recipe, with a couple of minor adjustments. I used 1 1/2 lbs ground beef (instead of 2 pounds - I like a soupier chili). I used 1 can dark and 1 can light kidney beans undrained (instead of the chili beans, b/c that's what I had on hand). I didn't use the 10 oz can of tomatoes w/green chili peppers (forgot it). And used 2 packages of chili seasoning mix (instead of 1 package). This tasted great, and I will definitely make this chili again!

Candied Yams
Made this for Thanksgiving Dinner and this was very good using canned yams. I reduced the amount of brown sugar to 1/4 cup, and didn't use marshmallows, just because I don't care for yams that are too sweet. Tasted great!
