Creamy Au Gratin Potatoes

I modified with no onion, 3/4 cup half and half, 1 1/4 cup fat free evaporated milk and added extra cheese between the layers. The extra cheese was a mistake as the potatoes got greasy but every one loved these potatoes - especially the crispy bits along the sides.

Beautiful Salad

I used this recipe more as an idea to build on... I used fresh cutie clemintines instead of mandarin oranges, spinach and romaine, plain roasted almonds, goat cheese instead of feta, and added avocado and mushrooms. delicious... I will make this again as my go to spring-summer salad.

Pineapple Cream Cheese Frosting

I made this to top Sam's Famous carrot cake which had pineapple in it. The frosting had the perfect amount of sweetness and a subtle cream cheese flavor. I really liked the pineapple kick. Just wish it was even more pineapple-y!

Cajun Crab Stuffed Mushrooms

I added breakfast sausage to the mix, omitted the bread crumbs and sprinkled parmesan on top. Mine released a lot of juice in cooking and were a little soggy so I'll try them on a grate over a cookie sheet next time. Yum! I will make these again.

Boudreaux's Zydeco Stomp Gumbo

This was really yummy. I was terrified of the 1 cup of olive oil but followed the recipe as directed (mostly). It turned out great! Mine could have been spicier but it was more versitile to just serve with hot sauce on the side. Next time I'm going to cook the veggies a bit first so that they are a little softer.

Sausage Jalapeno Poppers

These were yummy! I followed the advice of pre-cooking the bacon some and using a rack in the oven and the were not greasy. My only problem was that some of the jalapenos were really hot and some had no spice - and you never knew which you were going to get! I will definitely make these again with the jalapenos from my garden!

Fluffy Peanut Butter Frosting

This frosting is delicious. i am not a sweets person and I couldn't help but lick the bowl. I followed the method Cyndie Schneider indicated in her recipe. I had no problem frosting a 9" layer cake and had extra frosting. I used crunchy peanut butter because it was all I had on hand but it was still easy to work with and yummy. I'm not sure I'll ever make another frosting. Ever.
