Zucchini Souffle with Monterey Jack Cheese
This gets 5 stars because it's so easy, and very adaptable! This time I added a chopped, seeded jalapeƱo & some finely chopped onion, and topped with a little salsa. It was very tasty. Oh- and I doubled the bisquick & added 1/4 cup of milk to make it fluff up a little more this time. My sister used goat cheese and thyme as her herb-cheese combo. We love this recipe idea, thanks for sharing.

Sweet Zucchini Relish
With my food processor this was embarrassingly easy to make! My first time water bath canning, 2jars didn't seal but they taste so good we'll be eating them soon. Better to leave a 1/2 inch of head space in the jars. I did use half apple cider vinegar and half white since that's what I had on hand, and used only 2cups of sugar. Red & yellow peppers, no green. Very forgiving recipe, thank you for sharing!

Basic Pasta
This worked out great for us, the secret is definitely letting the dough rest. My son helped make them for his 1st anniversary with his GF. We used the Kitchenaid to mix the dough, and the pasta attachments to roll and then cut into fettuccine noodles. What a special dinner. Thanks for this perfect pasta recipe.
