Quick Black Beans and Rice

This was a very tasty dish. I followed it for the most part, except for using about half an onion. I also didn't mix in my rice. I cooked separately; kept separate until ready to eat. I will definitely make it again. I would recommend cutting up the stewed tomatoes before adding to the pot.

Shrimp and Okra Gumbo

5 Stars with alterations, I followed the suggestions of other reviews: reduced water by half but 3 cups water and 3 cups vegetable broth, seasoned shrimp with old bay, but used only 1 pound and 8 ounces of lump crab meat, used only 1 pound okra, and seasoned stew with Zatarin's creole seasoning and old bay, also a bay leaf. It was very tasty!

Easy Shake and Bake Chicken

This was an easy and tasty recipe. I only did half of the recipe, in the event that I didn't like and wouldn't waste. I also used less butter and olive oil as others suggested. It had a nice flavor, as I thought it would be bland. It was just right! A nice way to have fried chicken not cooked in oil! Thanks for sharing!

Lentil Soup

I only made half of this recipe, but added 1 extra cup of water (instead of 2). I left out the tomatoes and kept seasonings as it was for the full recipe. I didn't have any spinach, so that was omitted and I added a pack of ham flavored seasonings. It came out delicious. I will make again but use chicken broth or bouillon for better seasoning.

Carrot Cake III

I've been wanting some carrot cake for a long while. I can't just buy an already baked one, because of the nuts. I'm allergic. So, I found this recipe, which had rave reviews, made without the nuts. It came out delicious. I used 1 cup white sugar and 1 cup brown sugar, only because I ran out of white sugar. It tasted great to me; so I will use that from now on...because I'll be making it again. It was quick and easy, and the icing makes it even better!

Copycat Sprinkles Red Velvet Cupcakes

I can't remember why I chose this over the original. Nevertheless, it was so very moist. I didn't use the sour cream in the icing, because I did not factor it in when getting the ingredients. Oh well...it still tasted good to me. I love the cake, so I said why not cupcakes!

Garlic Cheddar Chicken

This turned out absolutely delicious. I'm always trying to think of different ways to prepare chicken breasts. You would almost think it would be cheesy, but I liked the crust topping. It was also very flavorable. I will definitely make this again and again and again.

Linda's Lasagna

Absolutely loved it. I halfened the recipe, just for a try because I've tried several different recipes. I love the substitute of cottage cheese over the ricotta. I added a little bit more sugar and not as much of the salt. I also used the italian flavor crushed tomatoes, and I made a little more sauce. I like my lasagna saucy. I will definitely make this again, a keeper - thanks for sharing.
