Cauliflower Gratin

Didn't add the bacon (though I wish I had it on hand) but added scallions and French's fried onions. Also added paprika on the top to add a little more color.

Scalloped Potatoes II

Scalloped potatoes complimented an Easter ham dinner. Great suggestions from the other users! Made the goop ahead of time in a roux. Also added fresh parsley and chives along with diced onions. Perhaps the next time try it with a cup of sour cream...?

Banana Banana Bread

Incredibly easy even for this inexperienced baker. Added 1 tbs. of vanilla extract and sprinkled a little cinnamon sugar on top before baking. My 6 year old loves it.

Cheese Quesadillas

Good base recipe. Also added diced chicken (cooked) and scallions to the recipe. Did the 15-@-350 recommendation. Flipped the quesadillas half way through. Careful flipping, though, as the contents may fall out in midair.

Cheater's Enchiladas

Good... but I'm not running out to the grocer any time soon to make sure I have the ingredients on-hand to make for company. Perhaps a better rating should be 3 1/2 stars? Added refried beans and scallions to the sour cream and cheese goop to make it a more robust side dish instead of an appetizer snack. Perhaps adding chicken or turkey the next time...

Broccoli Cheese Soup V

Very tasty! I did the 50/50 Valveeta & cheddar mix. A little salty for this family as we don't cook with it. Maybe the next time I'll make it with lower sodium chicken broth. Definitely worth keeping in the recipe box!

Easy Meatloaf

Used a broiler pan and created a 2# meat log. Sauteed frozen diced onions until opaque in color. Added minced garlic. Added 1 TBSP of Worcestershire Sauce. The Sauce: Doubled the ketchup/brown sugar but not the mustard. Cooked for about 75 minutes for 175 degrees. Great results!

Baked Paprika-Parmesan Chicken

I think 75 minutes to cook is a bit too long as the chicken came out on the dry side. Will definitely try it again and watch the internal temperature of the chicken more closely.
