Quinoa with Peas

My husband had a second helping of this and he hates grains! This is very tasty. I used red quinoa and I think that next time I will use fresh peas for more of a color contrast.

Creamy Chicken and Wild Rice

Quick Cake

My hubby says, what can you make real quick, he was thinking cookies, but with no butter at room temp, that was not going to be quick. So, I whipped this up. It's really moist, and flavorful. The only thing that I would different would be to mix this in a bowl and not in the square pan as it was difficult to get it properly mixed.

Chef John's Caramel Chicken

If there were 10 stars I'd give it that. This is excellent! It's easy to prepare, easy to cook and tastes like it took much longer. I served this with couscous, but next time I think Jasmine rice would be better. I can see making this once every couple of months. The dear ones just loved this.

Easy Paella

Love it! This is really pretty easy and very flavorful. I did not have saffron and substituted saffron rice, not next time. I'm going to scour the tow until I find it. This makes 8 servings but there were seconds & thirds around our table, so there wasn't much left over for lunch the next day. If you make this, make it as directed, then the next time you will know what you want to tweak. For us, next time, it's going to include clams, mussels, and calamari. I'm going to do chicken wings separated instead of the cubed breasts.

Chef John's Buttermilk Fried Chicken

I have to say I think that Chef John has some wonderful recipes. I made this exactly and it turned out really good. I really like how the buttermilk makes the chicken moist & tender.

Sweet and Sour Pork III

This was so good. The sauce was a good combination of sweetness & sourness. The entire family loved this recipe. The best thing for me was the cornstarch coating. I hate the restaurant sweet & sour because the meat has such thick breading around it. The cornstarch in this recipe was light & crispy and it stayed crispy even with the sauce. The only thing that tripped me up was the timing. You have to let the meat set with the egg white & onion mixture for an hour. I guess I didn't read correctly and got caught up in the day and my 5:30 dinner turned into a 6:45 dinner. To fix that I'm adding a personal note on this recipe. Oh, I also doubled this as we have 5 in the house & 4 that eat lunch daily so this is a good leftover meal.

Grecian Pork Tenderloin

This is the first time that I cooked a pork tenderloin. I thought since they are an extra lean meat it would be dry & tough. This recipe helped the meat stay moist and it virtually melted in your mouth. Great flavor. The oregano was a bit heavy so if you are not fond of that earthy flavor cut it back. I used a flat griddle as I don't have a grill pan (yet) but that worked well also. I'm going to try this on the BBQ as I think that would work well also without heating up the house.

Greek Couscous

This was a hit. I made my own garbanzo beans as I had those on hand. The husband liked the added texture the beans added. I loved the feta & kalamata olives. We will do this again.

Italian Vegetable Saute

This was not bad. I think that next time I will add some zucchini as only having peppers and tomatoes it does not feel complete. The flavors were good, it was just missing something.

Chicken Milano

This was a total hit. Everyone loved this. It was creamy and fresh tasting. The sauce was amazing. Next time I just need to remember to put the pot of water on first. Having that as the third step of the recipe is kind of out of order for me, as I did not read this through all the way again before starting, so I had to take the chicken and sauce off the stove to get the noodles cooked. I'm also going to cut down on the amount of tomatoes, as there were just too many for us. They got picked out and left on the plate. All in all, it was a great recipe.

Georgie's Mango Papaya Salad

This was so refreshing. We had this as a side salad for dinner, but I could see this with a sandwich at lunch. The "dressing" was an unexpected surprise. I was concerned that it would have a strange taste, but the balsamic vinegar added just the right tartness to balance out sweetness of the fruit. I forgot to add the almond brittle when I served this, but we noshed on that after dinner making it a wonderful dessert.

Hawaiian Fish with Pineapple

This got mixed reviews. My husband really liked this, but my son (who does not really like commercial fish) didn't. Granted my son felt that it was just the commercial fish and not the flavor. Personally, I can think of better ways of preparing fish. My rating comes with some altercations to the recipe. First, I marinated the fish for 30 minutes in 1/2c lemon juice & 1/2 c pineapple juice and then baked the fish with coconut milk. I can't imagine using regular milk with this dish.

APPLESAUCE PUDDING

This is an excellent end of the month dessert. No eggs, just a bit of milk and the rest, pantry staples. It's an excellent dessert when you don't have time to futz in the kitchen. Quickly mix it up and let it bake.
