Baked Sweet Potatoes with Raisins and Pecans
This dish was so, so, so easy and there aren't many ingredients, so it's cheap too. It took no time at all except to peel and cut up the sweet potatoes. Just throw it in the oven and it's done in 55 minutes. It went over very well at the potluck dinner...they ate it all! It was sweet, but not too sweet. I highly recommend this dish if you're cooking for a lot of people (or even for just yourself) because it's easy and delicious.

Quinoa Pilaf
This recipe was very very good. I recommend lots of onions, carrots, celery, and peas. Use a large dice for the onions, carrots, and celery. I used chicken broth instead of water and it was absolutely delicious. It was extremely quick and easy as well. This recipe is great for you and it tastes good too!!!

Chocolate Chip Oatmeal Cookies
They were pretty good! The insides are like cake and the outside is crisp. Don't use this recipe if you are looking for chewy cookies. I recommend adding a little (1/2 tsp. to 1 tsp.) cinnamon also for more flavor. I agree that they were pretty pale -- don't leave them in the oven longer b/c you think they need more color b/c they'll burn! The cinnamon adds a little color also....I bet nutmeg would work well too. I would make them again. They're very fast and relatively easy.
