Yam and Apple Casserole

This was easy to make and good. It's fairly healthy but sweet. I added walnuts to the left overs and that gave it some crunch.

Broiled Grapefruit

If you don't like grapefruit, you won't like this. I thought it might be enough to get my kids to have a few bites, but no. They didn't like it. The butter/grapefruit combo didn't do it for me either. A suggestion though. I'd skip the taking the grapefruit out of the rind part (just to put it back in again) and just cut in half, top with the ingredients. I still had to spend time getting the meat out with a spoon anyway.

Citrus Salad

This was nice and tasted light. I imagine the taste will depend greatly on the quality of the citris. Also freshly ground black pepper is good. I peeled the membranes off the grapefruit since they tend to be very bitter. My hubby and I ate it all at once.

Red Bell Pepper Coulis

Absolutely scrumpdillyishush! This tasted like a roasted red pepper sauce without the work of roasting and peeling. I will never roast them again. This was very tasty!

Fruit Muffins

This is a good base recipe. Made as is, it is pretty bland. Just add some spices and more fruit (and maybe sugar) and then it's yummy.

They are big. I've used higher baking powder to flour ratios before, but never achieved the size of these suckers. Makes me ponder... Anyway, great, easy recipe.

Beet Salad with Goat Cheese

Excellent use of beets. It makes a very good salad. I did find the "dressing" was too thin and cooked it with corn starch to thicken it. That way it clings to everything better. Yum, yum!

Cream of Celery Soup

Good and easy. But a little bland. I added white wine and that helped. I tried it before I blended the vege's into the broth and it did have a better flavor without the vege's, just so you know. If you keep the vege's you'll want to add more salt. I drzzled olive oil with more white wine when I served. Thanks for the easy recipe! It would be good as an appetizer, but not as a meal.

Cucumber Fruit Salad

This is a lot like a Waldorf and a way to use up cucumbers. Note: I used lowfat sour cream. I don't recommend that. This recipe needs the flavor of the real stuff. I added lemon juice to liven it up. Good stuff.
