Pebber Nodder (Danish Christmas Cookies)

This cookie tastes phenomenal! I really like that it uses a handful of common ingredients. The dough was easy to handle, although a bit wet, but rolling and cutting was a cinch. My rating is unchanged by this, but my partner mentioned that they were a "little plain". I feel that they may not be ideal for people expecting full-on, super-sugared up Christmas cookies. I love that they are subtle and would pair well with tea, coffee, or cocoa.

Pepparkakor II

Best find this Christmas! I was looking for a homemade version of the Anna's pepparkakor cookies and I'm so glad that I tried this recipe. The dough smells so wonderful and it was easy to roll out and cut with minimal use of flour. (I think it's easier to handle than the typical sugar cookie dough!) The finished product tastes delicious and it's perfect for anyone that truly wants the flavor of holiday spices.

I've made this recipe several times - I love it! A huge bonus is that it has so few ingredients and looks great without much effort. The only trick I've found is to watch them and make sure they aren't too golden- too overdone and they just don't have the right taste.

Munn Cookies

Those who've not tried this recipe are really missing out! This is a great cookie to add to a more traditional holiday plate, because it looks so elegant. The taste is subtle with a lovely lemony finish. (I was generous with the lemon zest.) I was initially concerned about straying away from the circle shape, but my stars turned out lovely. I could easily see one adding a nice sugar glaze if they want a more decadent flavor, but I don't think it's necessary.

Guacamole

This is my go-to guacamole recipe. It's the perfect balance of all the flavors. My only change is instead of the optional cayenne pepper, I add two serrano chili peppers, which gives it a fabulous kick.

Chicken Pot Pie IX

I love this recipe! My only alterations (with great success) are reducing the butter down to 1/4 cup, using 1% milk in cream sauce, and substituting whole wheat flour. Tasted great!

Excellent and Healthy Cornbread

I love this recipe and prefer it over store bought cornbread mixes. Although something that folks accustomed to the finer texture of boxed mixes, I like the texture that the cornmeal provides. Great right out of the oven with butter and a drizzle of honey!

Cream Cheese Frosting II

This frosting recipe is stellar! I made it with only 1 package of cream cheese, mostly because I wanted a more subtle taste. It worked great on my pumpkin cupcakes. I prefer this over the store-bought brand any day!

Black Beans and Rice

This is a fantastic recipe! The only additions that I have made is adding 1 cup of thawed, frozen yellow corn and a can of petite diced tomatoes (drained) for additional color. It works great in taco salad, burritos, or with tortilla chips. Love it!

Moroccan-Style Stuffed Acorn Squash

I loved the flavor combination of the squash and couscous, but I really felt like the raisins and veggies were drowned out by all the cumin. I felt that 1 1/2 Tbs of cumin is just too much. Next time I will also be a bit more generous with the raisins to get more sweet in the mix.

Feta and Olive Meatballs

I like this recipe - I did make three major alterations: lean ground turkey meat, black olives, and sheep's milk feta. (It's what I had on hand.) They still turned out great - a little dry, but not too greasy.
