About this Cook
I love spending hours in the kitchen and the thrill of a new dish. I don't particularly enjoy challenging/finicky recipes. I love the tried and true, forgiving, flexible recipes that reflect the love of the cook and the season. I've recently purchased "Everyday Harumi" and I hope to incorporate Japanese dishes into my repertoire.
My favorite things to cook
Cookies and breads. I always am on the lookout for easy ethnic and traditional recipes that have a regional theme. I particularly enjoy Swedish, Icelandic, and rustic American foods. I'm dying to find easy recipes for lomper, flatbrauĂ°, skyr, and kleina!
My favorite family cooking traditions
Holiday cookies! Thank goodness for the popularity of cookie exchanges - it gives me an excuse to bake and give them all away!
My cooking triumphs
I'm particularly proud of my recent success with a Cooking Light recipe, Milk Honey Raisin bread. Yeast breads are hit or miss with me, but I'm hoping to get better.
My cooking tragedies
My recent Irish soda bread disaster. I blame my oven - the temperature varies wildly and I was solely relying on the timer to indicate doneness. Well, the doughy center of the soda bread inspired me to purchase an oven thermometer.

Feta and Olive Meatballs
I like this recipe - I did make three major alterations: lean ground turkey meat, black olives, and sheep's milk feta. (It's what I had on hand.) They still turned out great - a little dry, but not too greasy.

Moroccan-Style Stuffed Acorn Squash
I loved the flavor combination of the squash and couscous, but I really felt like the raisins and veggies were drowned out by all the cumin. I felt that 1 1/2 Tbs of cumin is just too much. Next time I will also be a bit more generous with the raisins to get more sweet in the mix.

Black Beans and Rice
This is a fantastic recipe! The only additions that I have made is adding 1 cup of thawed, frozen yellow corn and a can of petite diced tomatoes (drained) for additional color. It works great in taco salad, burritos, or with tortilla chips. Love it!
