Spicy Sweet Potato Soup
I prepared this soup for a class project this week, and it was a huge success! Classmates and I had to plan a menu, prepare, and serve a meal to faculty members. We served this soup, bread and a light salad. They all loved it (even those who did not normally like sweet potatoes or spicy food) and it was so easy to put together. I actually forgot to add the peanut butter at the end, but the soup still tasted great. One tip: Unless you really like ginger, you might want to cut it back a bit. I prepared the recipe twice, once to test and once for my project. The second time I used less ginger, but it still tasted a bit strong (however the dollop of sour cream does help calm it). Simple Scones
So delicious, and very easy to make! I made the cranberry-orange variation. I only got about 1/2 tsp of zest from my orange, so I added a bit of orange extract to make up the difference. Came out fine - perfect for Christmas brunch. They were a big hit with my family; my dad ate three!

Chantal's New York Cheesecake
Followed the advice in the comments: brought all ingredients to room temperature, added eggs last one at a time, reduced flour to 2 Tbsp, used a water bath, and left the cheesecake in the oven for several hours after baking. It turned out phenomenal! No cracks, and a beautifully smooth & creamy texture! I forgot to grease the sides of the pan before preparing the crust, but there was enough butter in the graham cracker crust to keep it from sticking. I also used 1/2 reduced fat cream cheese and light sour cream - still tasted great. My one slight complaint is that the crust was not crisp and crunchy. This is probably unavoidable, however, due to the long time between baking and eating. :) Wonderful recipe I will definitely be using again!
