About this Cook
I'm a stay at home wife/mother. Been married for nearly two years. Our first daughter, Gwen, was born 2/21/2010 and our second daughter, Amelia, is due early May 2011. Life is fantastic and I enjoy it every day!
My favorite things to cook
I love to surprise my husband with new dishes. Things that we ordinarily wouldn't cook... or order in a restuarant... to broaden our horizens. And, if I see a smile across the table, I know it was a success.
My favorite family cooking traditions
Basically, the only cooking tradition we have is if someone is cooking, be it me or my husband, no one is allowed to be snooping in the kitchen. Get out and be surprised!
My cooking triumphs
I think I am most proud of my cheesecakes. They come out beautiful every time.
My cooking tragedies
I am completely unable to make a decent pie! I have no idea what happens but they come out terrible every time!

Brennan's Irish Soda Bread
Made two loaves today... absolutely delicious! Wouldn't change a thing!

Maria's Stuffed Chicken Breasts
Not bad. Was a little bland for our tastes (we tend to enjoy spicy foods) so next time, I'll add some chili paste to the ricotta mixture. Will certainly make again with minor tweaks.

Potato Chip Chicken Casserole
Not a fan. My husband and I didn't like it. Our one year old who eats ANYTHING didn't like it. Won't be making it again.
