Best White Icing Ever

I love buttercream icings, so I wanted to have some butter flavor in this, but keep it a nice white icing. Subbed in 1/4 c salted butter, 1 tbsp milk, and 1/2 vanilla, 1/2 almond extract. Reduced shortening to 1/2 c and sugar to 3 1/2. Definitely needed to add water for texture, but milk gave it a creamier flavor. Would definitely make this again, probably play with different clear extracts/flavorings. If you're looking to decorate a 2 8" rounds, you'll need to 1.5 or 2x this recipe. With my slight reductions, it was barely enough to fill and frost. Great recipe!

Lemon-Blueberry Oat Muffins

I LOVE lemon, so I modified the recipe slightly, but with less than stellar results. I used 1/2 c whole wheat flour and 1/2c all purpose, the whole lemon zest and juice of 1/2 the lemon and 1/2 tsp vanilla. The muffin was moist and tender, but had a tang to it that was a little off. I would make this recipe again, but cut down on the lemon zest and keep it to the 1 tsp the recipe calls for. 2 tsp tops. 5 stars for the texture, 3 for my modified flavor. Definitely worth trying again!!

Chocolate Ganache

Love this recipe. So simple and tasty! Perfect recipe for my first ganache. Great for any kind of chocolate, not just bittersweet, but don't forget to adjust the cream/chocolate ration when using other kinds (particularly white chocolate). I suggest semi-sweet. Also, if you want to use this as frosting, you will have to add powdered sugar or cut back on the cream. As is, it does set up, but never to spreadable consistancy.

Peppermint Chiffon Cake

Good recipe, but dry and a little tough. The toughness was probably baker error due to over-beating, so I'm going to give this another try. The flavor is mild, I made a peppermint butter cream, which complimented it nicely. Very pretty cake, I just wish the texture was a little better.
