Single Crust Peach Pie

Reviewed: Jul. 14, 2014
One of the best peach pies I have had/made. I did doubled the topping mix, added a 1/2 tsp cinnamon and tossed the peaches in about 1/2 cup flour (no need to drain them then saving all the yummy juice.) I put 1/4 of the topping in first, added the peaches and then put the rest of the topping on. Cooked just as instructed and it turned out perfect!

Slow Cooker Beef and Potato Curry

Reviewed: Mar. 4, 2014
Very good, easy recipe. The only changes I made were I used approx 2 cups baby carrots cut in half, about 1/4 cup green beans (all I had on hand)and half and half instead of cream. I served over fresh steamed rice (no yogurt cilantro or nuts - didn't have any handy). Do not forget to add salt to really bring out the flavors. I used regular yellow curry, next time I will use madras curry powder to give it some kick.

Honey Lime Tilapia

Good as is, but instead of discarding the extra marinade, I poured it over the veggies prior to cooking.

Beef Bourguignonne

Reviewed: Sep. 29, 2011
My husband and I loved this. I just added a little cornstarch to the sauce to thicken it a bit. Make sure you don't overcook the orzo though, the thicker sauce will make the orzo seem a little slimey!

Gumbo Casserole

OK, I might try making it with regular rice, the instant rice just gave it an unpleasant texture.

Olive Chicken II

Reviewed: Sep. 23, 2011
Very yummy. For my husband and I, I cut the recipe in half and then only used 2 chicken breasts (this gave us extra sauce to pour over rice.) I used extras olives and thickened the sauce a little with corn starch.
