Brie Cranberry and Chicken Pizza

I really liked this unusual pizza! Here's what I would do differently next time: 1) I used Trader Joe's wheat pizza dough for the crust. Since it wasn't a "prepared" crust it took way too long to bake at 350 degrees. Next time I would try the oven at 425. 2) I used jack cheese instead of mozzarella because I had it already. I think it's flavor overpowered the brie. I would use mozzarella next time, or maybe just less jack. It seemed like too much cheese anyway. (Is that possible?) 3) Lastly, it calls for 6 oz. of brie and I couldn't taste it. Since brie often comes in an 8 oz. wedge (like the one I used) I would put the whole thing on there. With more brie and less jack, it should taste a little more sophisticated next time. I will definitely make this again!

Italian Sausage Soup

I liked this soup and it was pretty easy. I did find that it was too salty. I wouldn't add the salt next time, or the liquid in the canned beans, to cut the sodium. I try to always give the original recipe a chance and not stray the first time. I liked the turkey sausage idea and may try that next time.

Green Grape Pie

I was disappointed with this pie. I wanted to try it because it sounded different. The only thing I didn't like was that it was so runny that when I poured it into the crust the crust quickly became very soggy. I quick cut a piece to try it. It was, indeed, tasty. If I make it again I will do the same as Mama Cass and thicken it more (a lot more), or maybe strain it. My 9" pie plate was fine. And I weighed the grapes.

Sweet Potato Minestrone

Man, did I feel healthy eating this! My husband really liked it. Of course we served it with crusty bread. I took it down one star because I thought it was really sweet. I'd like to make it again and am wondering how to make it a little less sweet. Add vinegar? Not sure.

Crispy Orange Beef

Wow! I made this tonight and man is it tasty! It smelled wonderful, too. As I was making it I thought it was taking too much time and attention to make very often (although it wasn't difficult) but when I tasted it I think I changed my mind. The fam dug it. I will probably make it for company or next time I bring a dish to church. As for the orange zest, I don't have a zester so I just grated the outside of the orange then chopped it up a little with the spatula while it was cooking with the sauce in the pan. It was fine. The leftovers were just as crispy the next day. Maybe sprinkle with sesame seeds next time for decoration?

Apple Cake in a Jar

I gave these as thank you's for Christmas last year. The ladies loved them. They were easy to do, inexpensive, and novel to give. They are great to have in your emergency food supply, too. I'll have to try the banana bread one next! I also noticed the "Cake in a Jar" recipe which shows how to use any cake mix. These are great!

Oatmeal Dinner Rolls

Wow! My sis-in-law wanted to "raise the bar" of her Thanksgiving bash and have it be a little more Martha Stewart. Oh no. I looked around for a new roll recipe and tried this one. These were so darn fab! They are heavy and soft and were very popular. There were no leftovers to be found! I've also given platefuls of these as thank you gifts. I always make a double batch which fits perfectly into three 13x9 pans. I like the overnight idea someone mentioned and the wheat flour idea. I'll try them both! Oh, and these are easy to make.

Swink's Chili

Not bad, I love using the crock pot. I thought it was a bit sweet and may try leaving out the tomato paste next time. It makes a lot and I've had leftovers for lunch many times. Don't forget to serve some good bread with it!

Cornbread that is a Meal

This is a good one! The perfect family meal. I didn't have any jalapenos lying around so I used a 4 oz. can of diced green chilies and it was just right. Even our 1-year-old digs it!

Irish Shamrock Cookies

I tried these cookies and they were fab! I had to make myself stop tasting the dough. I iced them with the Sugar Cookie Icing on this website. The almond flavoring in the icing slightly masked the pistachio flavor of the cookies, but they were still very wonderful! I've already bought 4 boxes of pistachio pudding mix to be ready to make them again!

Mum's Irish Apple Pie

I made this pie for St. Patrick's Day and it looked great and was so tasty! I may go slightly lighter on the nutmeg next time, but it was the crust I couldn't stop thinking about for days! Sour cream was the secret ingredient that made it wonderful. I don't think I've ever made a homemade crust before (I always get the Pillsbury folded up kind) but it was easy! Also, I used a shamrock-shaped cookie cutter to cut three shamrocks in the top crust. I didn't remove the cut pieces, I just scooted them over slightly. These acted as decorative steam slots. I also like to put any leftover rolled out crust dough in a small pan, sprinkle it with cinnamon and sugar and put it in the oven with the pie for a few minutes.
