Christmas Breakfast Sausage Casserole

This was wonderful. I used hot country sausage and sourdough bread. I did use 6 eggs and 1 1/2 cups milk so it was a little more eggy. It was a little greasy when I first took it out of the oven, but as it cooled a little it was perfect. I will definately make this again.

Gingerbread Men

These were excellent and very easy. I doubled the batch and made 45 gingerbread men. I cut them thin so they were nice and crisp. The only change I made was to add a couple shakes of cloves into the flour mixture.

Robbi's M&M Cookies

I made these for my son's hockey team and they came out great. They spread and were pretty thin, but they stayed chewy and had great flavor. I used half butter and half shortening because I prefer the flavor of butter in my cookies and I didn't have butter flavored shortening on hand.

Pumpkin Bread IV

I made this as Christmas gifts this year and received rave reviews. This recipe made 8 small loaves. I glazed them with a cinnamon glaze made of 1 cup powdered sugar, 1 tsp cinnamon and 2 tbs milk. It was a nice compliment.

Oven-Baked Beans

I made this in my cast iron skillet and just baked it in the skillet. It worked very well. I like this recipe because it works for a small family like mine. My go-to baked bean recipe is much too large and cooks to long for a regular meal in our house. This is a great substitute.

Honey Peanut Granola

I made this for my son's class for Halloween and added candy corn. It was very tasty and made a nice seasonal snack, but a seemingly more healthful alternative than many other treats. My son has asked me to make it many times since then.

Chocolate Chip Cheese Ball

This is always what I am requested to bring to work potlucks. Everyone loves it. I do not use pecans, as I don't like them. No one seems to miss them though. I serve it with graham cracker sticks.

Slow Cooker Stuffing

This was a simple recipe and worked well for a large group. I made it for a holiday potluck at work. I browned sage sausage and the vegetables the night before and cooled overnight in the fridge. In the morning I mixed everything together and took it to work in my slow cooker. At lunch I turned it on and by dinner it was perfect. I will definately make this again.

Sage Pork Chops

I use this recipe regularly. The only difference I do is to use a can of stock rather than water and bullion. The nicest thing about it is that I can cook pork chops and chicken breasts at the same time, as my hubby doesn't like pork chops.

Country Green Beans

This is a great recipe as written, but the second time I made it I did a little alteration. I cooked up a few pieces of bacon and then chopped the bacon and used the bacon pieces rather than ham and a spoonful of bacon grease rather than the butter. I also used chicken stock rather than water. These were exactly like the green beans I remember as a kid that my southern "grandma" used to make. The whole family raved about them.

Mini Meatloaves

These are great. The secret to not having the mix too runny is to let the oatmeal soak up the milk before you add everything else. For the otpping we use BBQ sauce rather than ketchup, which is just based on our families preference.

Irish Cream Brownies

These were wonderful. The frosting really made them. We are not coffee lovers in our house, so I just used an extra teaspoon of milk. The frosting was sweet. Next time I think I will make a double batch of brownie, so they are thicker and that will make a better frosting/brownie ratio

Peanut Butter Frosting

Best Toffee Ever - Super Easy

Made this for Christmas gifts this year. It was wonderful. I stirred almost constantly. When it reached 290 degrees, I took it off the heat and poured the toffee out. I let it cool for a few minutes before I put the chocolate on so the chips didn't sink and then I spread them with an offset spatula. I didn't have any problems.

Mom's Macaroni and Cheese

I needed more noodles than the recipe called for to get the balance right, but that may be because I overestimated the cheese. I used seasoned salt rather than salt and added a teaspoon of mustard powder and a little more pepper. It was the first dish eaten at the buffet.

Chocolate Mint Cookies I

I made these for christmas cookies this year. They were wonderful. Since I was snowed in the day I decided to make them, I used mint truffle kisses since I had them on hand. I ground them in my food processor and then melted batch amounts in the microwave and spread it on the cookies after they cooled. This allowed me to control the presentation a little better. The first one I tried to melt the candy on and then spread and it flattened the cookie. I think that may be the problem that some people are having. Other than that one, all my cookies were puffy.

Spicy Rapid Roast Chicken

This is the only way I roast chicken now. It comes out so tender and delicious. I often cut some potatoes into small cubes, spread them around the pan and put a little salt and garlic powder on them to roast in the juices. It is such a nice meal and so easy to do.

Herb Rubbed Sirloin Tip Roast

This made a great roast. I ate it plain and my husband used it to make a BBQ sandwich and we both agreed that it had excellent flavor. We used the leftovers to make fajitas the next night and it was just as good then. The only change I made was to use 1/2 the garlic powder and add about a teaspoon of minced garlic also. We will definately use this recipe again.
