Slow Cooker Enchiladas

Very nice but really, as written waaay too much sodium. I made with low sodium soups and lower sodium taco mix and it tasted really good. I didn't use as much cheese either (2 cups total), but only because I didn't buy enough when at the store. It didn't make a big difference. Davidbooks and I enjoyed this very much.

No Bake Cheesecake I

I made cheesecake cupcakes from this recipe. I doubled the recipe but I still did not have enough filling for the 2 doz cupcakes I had intended to make. I used Truvia for baking as a sugar substitute, two 8 oz packages of cream cheese (one was lower fat) and put in vanilla and less lemon juice. Then I made a variety of fresh fruit toppings for each cupcake. I should have taken a photo, but trust me, they were pretty and everyone had more than one. Thanks for an easy and tasty dessert recipe.

Rempel Family Meatloaf

I thought this was really a good meatloaf recipe-I knew it was too salty after reading a few reviews so I just used 1/2 package of the onion soup mix. Not having steak sauce, I substituted 1 1/2 tablespoon of Worcestershire sauce and it was fine. Thank you-no leftovers in the fridge a day later!

As others did, I doubled the sauce, and made it lighter by using less cream, making a roux, and sauteeing the pounded breasts after dipping them in a bit of flour. Fresh Basil is the key IMHO!

Spinach Tomato Tortellini

My family and myself loved it. I did get creative as others did, by adding fresh chopped tomatoes, garlic, more spinach and some shrimp that was sauteed in a bit of butter, spices and olive oil. All to our taste but the recipe was quite inspiring. Thanks Lela!

Spinach Quiche

I changed this recipe by adding about 1/2 cup of feta to the cottage cheese and leaving out the bread crumbs. I put a cup of shredded parmesan on top instead. It's very spinachy-just the way my family likes it!

Sweet and Tangy Slow Cooker Bar-B-Q Pork

After reading other reviews I reduced the amount of sauce by 1/3 and boiled the pork for 30 min to reduce the fat content. I didn't have the celery seed, or the green peppers (I substituted green pepper sauce). It turned out great-everybody raving about my first attempt at bar-b-q. Thanks for a winning recipe-I'll be using it again.
