Marshmallow Peanut Butter Dip

Even though the kids liked this, I will not make it again. I would've had to add a lot more water to thin it out because it became so thick after sitting for a while the kids were eating it that they picked it up in clumps with their fingers!

Butternut Squash Fries

My 2 year old inhaled these! I put them under the broiler for a few minutes at the end to crisp them up a bit. I think no matter what you do they'll always be a little soft but they're delish and good for you!

Ranch Dressing II

This is so great! I change the ingredients to 4 servings and it gives me all of the measurements that go perfectly with a can of tuna and some diced pickles. Add to fresh bread and voila! Tuna sandwich!

Berry Cornmeal Muffins

I needed a snack for my daughter after her nap and was tired of feedding her the usual grapes and cheerios so I made these in my mini muffin pan (baked for 17 min) and they were perfect for her. I used frozen strawberries and light sour cream since I didn't have yogurt on hand. I also added a tablespoon of ground flax and 1/4 cup of wheat germ to make them more nutritious and she loved them!

Sausage, Peppers and Onions

Excellent and SO easy! I used bratwurst sausage and used 1/2 bag of large shelled pasta and mixed it all together and served it with salad. Yum!

Carrot Raisin Bread

I followed the recipe perfectly (I don't like to change recipes before trying them) and it never rose. I know my yeast is fine so I'm not sure why I ended up with a bread machine full of muck.

Frosted Corn Flake Cereal Clusters

These are great but I feel like I completely changed the recipe but I loved (so did my co-workers)the way they turned out. I used chocolate chips (didn't have butterscotch) and used about 5 cups of regular corn flakes and they were well coated. I can't imagine these with the frosted flakes - my teeth shatter thinking about it. They stay nice & crunchy but you need to keep them in the fridge if the weather's even remotely warm because they melt easily.

Paprika Pork Chops

This was amazing! I love how fast the chops cooked under the broiler, I don't think I'll do it any other way from now on - they were perfect! My only recommendation would be to sautee the onions for about 5 minutes until they start to get soft and then add the sauerkraut and cook that for about 15 minutes on medium heat, adding a little more butter until it's a light golden brown color. To me using sauerkraut right out of the jar is like eating it raw. Cooking it softens it and gives it a great flavour.

Savory Chicken Breasts

I doubled the sauce and added 1 cup of beef broth (didn't have chicken) and 1/2 C red wine (had it left over from company). I cooked the chicken from frozen with chunks of carrots and potatoes and flipped the chicken breasts over every 20 minutes for a total of an hour at 425. When cooking was finished, I removed all of the chicken and veggies and added 1/2 cup of cream cheese and stirred until melted and spooned the sauce over each individual portion. Yum!

Coconut Macaroons

These are great! I only got 20 out of this batch so double up! I grated some dark chocolate on top of them and they looked like they had pepper on them so I really don't recommend this because it looks rediculous. If you want chocolate on them, drizzle melted chocolate or even a tablespoon of cocoa should do the trick.

Louisiana Sweet Potato Pancakes

Mmmm good! I used a 14oz can of pure pureed pumpkin (about 2 cups) instead of bothering with the sweet potatoes and it turned out great! I also added a teaspoon of pumpkin pie spice, a little vanilla, a tbsp of sugar and 1/4 cup of wheat germ (for added nutrition) and my 14 month old and I loved it!

Pumpkin Cheese Bread II

I didn't have the size pans needed so I made muffins! They turned out well by baking them at 325 for 25 minutes (probably could've used only 20 mins). I put too much pumpkin batter at the bottom so I would lessen that next time because I didn't have enough to put on the top and the cream cheese batter ended up baking at the top, which wasn't horrible but if it were hidden in between the layers, it would've had more of a cheese cake consistency. In summary, these were DELISH!

Chicken Tortilla Soup V

Good but not great. I will make it again because it was so easy to make in the crock pot. I threw in the chicken breasts whole and shredded them at the end of cooking and also added a can of black beans.
