Bubba's Barbequed Skirt Steak

This steak is GREAT! I stumbled upon this recipe and gave it a shot. I'm so glad I did, because this is probably my favorite steak to grill. No changes needed, great flavor.

Taqueria Style Tacos - Carne Asada

This is a fantastic recipe. The marinade is great as-is, sometimes I do add some orange juice too. I use skirt steak (it's generally cheaper at my store) and it turns out awesome. One thing that I do, is cook the meat in SEVERAL small batches. It gives each piece a nice char. Great recipe!!!!!!

Molly's Mouthwatering Tzatziki Cucumber Sauce

I used the mayo once, but didn't use it ever again (not because I didn't like it, but because I didn't notice much of an improvement). I use a bit more sour cream to make up for it. I also don't put the cucumber in the food processor. I peel it, cut it lengthwise and then scoop out the seeds. Then I dice it up into small chunks. I LOVE this tzatziki. It is GREAT! Better than most gyro places I go to. I pair it up on some flour tortillas with the Haitian Voodoo Sticks (from this site).

Awesome Spicy Beef Kabobs OR Haitian Voodoo Sticks

These are great! They do get spicy though - so I normally end up leaving some without the pepper for my son (3 years old). I load the grilled sirloin into fluffy flour tortillas and then slather it with Molly's tzatziki sauce (from this site). Sometimes I get a craving that only this recipe can satisfy. Also, rather than rolling the kabobs in the olive oil, I generally just put the meat and the olive oil in a bowl and mix it up right before I skewer them.

I make this all the time! I use turkey sausage, but there is so much flavor that you don't even notice. It is really great, easy and healthy too when you use turkey sausage and one of the healthier noodle varieties.
