I have been eating a vegetarian diet for almost 8 years, and it seems that every new recipe I try I discover a new vegetable, fruit, nut, or other ingredient I want to learn to cook.
My favorite things to cook
I enjoy cooking thick soup using market-fresh vegetables, and black bean burgers are great fun too. This summer I tried pickling for the first time and we made a lot of watermelon-flavored drinks. Yum!
My favorite family cooking traditions
Tacos, egg rolls, lasagna.

Marinated Mushrooms
Simple to make and tastes great. Exactly what I was looking for. I boiled a package of mushrooms in this mixture for about 5 mins then set it in the fridge for two days. Ate it on top of salad and just by themselves. Am making again for grilling. Thanks!

Rosemary-Infused Watermelon Lemonade
This is very delicious. I used dried rosemary because I didn't have fresh. So the rosemary taste isn't as strong. But I am enjoying it very much.

Pickled Watermelon Rinds
I made these as my first pickling adventure, and also my first time using watermelon rinds. I made "refrigerator" pickles instead of canning them. They are ok, but the vinegar taste is too strong for me. I think next time I will dilute the vinegar. My boyfriend really liked them though.
