This was excellent. I am only cooking for myself and this recipe makes a lot. That's ok because it's so versatile that you will enjoy using the leftovers for other dishes. I made this adding different herbs like thyme. I have also added sautéed mushrooms. It's a side dish recipe that can be adapted to suit many cuisines. When I made it this week I used it as a side dish for some curry dusted sea scallops. The next night it was used in a fried rice style preparation with veggies and served with fish. I made lunch with it. I made up a grain salad with it, tossing it with a home made dressing, chopped ham, and dried apricots, craisins and chopped dates. Then with a portion I froze, I added it to a vegetable soup.
