I am a cancer survivor looking for easy to swallow recipes. I eat a lot of vegetables, soft pasta, grains, eggs, and dairy. Meat remains a choking hazzard.
I also enjoy yoga and belly dance classes.
Ratatouille is a weekly dish in the summer using our fresh veggies from the garden. I make many different versions and I do enjoy this one. Great over pasta, with crusty bread or over rice or grain pilaf. Love it!!
