Zucchini Patties

My boyfriend and I love this recipe! I've made it twice. Both times I left out the flour and substituted some Italian style bread crumbs. I also added some pepper jack cheese, mostly just as a preference. I also created balls with the "batter" and coated them in more bread crumbs before cooking them. They turned out great! My only complaint would be how difficult the patties were to flip in the pan, which could be because I eliminated the flour and added extra cheese.

2-Step Creamy Chicken and Pasta

This recipe was great! We loved it! Instead of doing a mixed pasta-veggies frozen bag, I cooked regular pasta and then mixed it in with the soup and frozen veggie pack. It turned out great! Will defiantly make it again!

Tuna and Black Bean Salad Wraps

Overall, this recipe was pretty good. My boyfriend loved it. It is a great cool recipe for hot summer days. I will probably make this recipe again, but I would change one thing. For me, the serrano pepper was too hot, and kind of ruined the flavors with it's spicy flavor. However, aside from that, it was good.

Tuna Casserole III

The main problem I had with this recipe was the salt content. Because of the use of chips, the salt content shot through the roof. I am not one to use an excess amount of salt as it is, and this simply contained too much. Also, the tuna was a bit overpowering, which could be because the flavor was enhanced by the salt. I think I would try this recipe again, but instead I would find an unsalted or lightly salted chip, and use more soup and less tuna.

Creamy Potato Lasagna

I switched the ham for smoked sausage (personal taste preference), and sliced it and the potatoes fairly thin. I also homemade Alfredo sauce, which i make for pasta regularly. I then layerd them with swiss cheese slices (couldn't find shredded) until reaching the top. A few major problems with the outcome. 1: it was super greasy. There was literally grease pouring over the sides. Disgusting. 2: the way that the recipe recommends adding the potatoes didn't allow them to thoroughly cook through. They couldn't be cut through and ended up making serving a mess. 3. The taste was.... okay--for the first few bites. But then the swiss cheese and alfredo sauce and grease just over powered everything. It was way to rich. IF I were to try this recipe again , I would boil the potatoes at least part of the way through, and switch to a different cheese. It seems to be a good idea, but this recipe could use some work.

This recipe is really simple, and overall, fairly good. We had only one real complaint: it was a little flavorless. The recipe called for no salt, no pepper--in fact, no spices at all! For people like us who love flavor, this was a little too bland (and I did add some salt and pepper). I think we would probably make this again, but we would add some spices, like basil or cumin

Uglies

These were great! I used a small, mini biscuit set (about 1.5 inches across), and rolled them really thin, until they were similar to pie crusts. I also mixed the cheddar in with the meat mixture, then topped them with more cheddar and an italian cheese mix. They turned out wonderful! Made about 10 pieces.

Scones

these scones are delicious! I added some lemon juice and vanilla to the egg/milk mixture, and then added that to the flour mixture until the dough was moist. I rolled it out, cut it into smaller pieces than what this recipe called for--about half the size. Then I let them sit in my refrigerator for the night, and cooked them the next day. While still warm, I topped them with Lemon Icing. They were so delicious! Will make again!

Corn and Black Bean Salad

My boyfriend and I had this yesterday with chicken soft tacos. He made it while I was at work, and didn't refrigerate it nearly as long as the recipe called for--only about an hour. He was a little worried about it, not sure that all the flavors would go well together. However, we both loved it and it went great with the tacos. The vinegar really brought out the cilantro flavor, and wrapped it all together nicely. I think with a little more time refrigerating, the flavors would have been a little more consistent, but we still loved it. Will definitely make it again.
