No Bake Lemon Cheesecake

This recipe is very similar to the one my mum made for us as kids. Good memories eating this light, fluffy treat! For those who had trouble beating the evaporated milk 'til peaks form- MUST use FULL FAT evaporated milk AND it must be VERY COLD, whip on HIGH. :-)

These were truly excellent! and the recipe made far more than 18 for me- more like 30 and they were very big cookies. YUM! These have become a family favourite :-)

Pork Tenderloin with Gravy

This was SO good!!!! Tasted so like beef stroganoff to my family- a favorite. Made it as a stew over rice. (simmered on the stovetop for over an hr before adding the veggies.) Very tender! We will make this again :-) maybe with mashed potatoes or the usual egg noodles.

Rice Pudding III

This turned out really quite good. Here are the changes I made( just because I pretty much change every recipe- even the 1st time I make it.)1st I used a mix of whole milk(1 cup), cream (2 cups) and 1%(2 cups) for the 5 cups the recipe calls for. 2nd I used 6 eggs instead of 7. 3rd I had about 2 and1/2 cups of short grain brown rice to use up. I beat the eggs well first and added the vanilla, sugar (only 1 cup) and the milks to it and beat again, I even beat in all the rice I had.(hand blender) Baked it at 350 for 45 min(wasn't sure if it should be covered or not so DID cover for half that time.) It was all separated like many of the reviews said, the rice was all at the bottom, just stirred it up well and Voila! a lovely creamy rice pud!! YUM. There must be an easier way to bake a rice pudding tho' ,thus only 4 stars.

Beef Barley Vegetable Soup

Yum! i love beef barley soup, and this is a pretty good one. I cheat and use ground beef when i don't have chuck or stew. It still turns out really good!

Tangy Pear and Blue Cheese Salad

mmmmm! everyone loved this salad at Thanksgiving. the dressing was just right. i made 2 changes- 1 to make it special and one because i didn't have the right ingredient. i lightly carmalized the walnuts mm mm, and used feta because that is what i had. thanks for a great salad we can use as long as the pears are ripe! perfect for fall.

Avocado Green Goddess Dressing

this dressing is SO yummy! not liking the anchovy taste ,we omitted it- making it most excellent for my family. we eat this as often as we can when avocados are a good price.

Buttermilk Oatmeal Muffins

my family of 9 really likes these muffins. we found them somewhat too sweet for our liking so i cut the sugar by about half. really yummy by themselves or with stew etc. thanks for sharing
