Chicken Fettuccini Alfredo

I've never made Chicken Alfredo before but think its fair to say that this recipe definitely puts olive gardens Alfredo to shame ha ha the only things I did differently: used canned milk instead of regular milk and added pepper jack instead of Colby, I loved it and will definitely be making this again.

Pizza Dough III

The pizza crust itself was really good. My dad said it was "good" but I tend to be really critical of my own cooking ha ha so these are the errors I made -I should have shredded a blend of Italian cheeses rather than buying a bag of the Italian blend stuff -I didn't think the sauce was sweet enough so I added a few teaspoons of sugar and I SHOULDN'T have done that. -I should have done two small individual, thin crust pizza's rather than one large. -I should have baked the pie plate (not sure what its called, its stone and flat and round) and oiled and seasoned it before laying the dough on top. I think this would have given it a way better crust. *All in all, the crust recipe was great, I'd definitely recommend it and rather than the advised minutes to let the dough rise, I'd give it a full hour just to be safe!*

Turkey Wild Rice Soup II

I thought this turned out really well! I didn't add the almonds and I only had 2 cans of chicken broth that measured out to be exactly 3 cups so I added one 1 cup of water with a heaping tablespoon of this chicken bouillon paste that I had in my cupboard. All in all it turned out great.

Baked Salmon with Coconut Crust

I made this today and it turned out better than expected, I did change it a little though: -I toasted the coconut beforehand. -I didn't have any Panko breadcrumbs so I used rice crispies as a substitute. I also dipped the salmon in egg whites before the breadcrumb mix to make it stick better. -I followed a recommendation from a comment below and dripped a mix of 1 tsp brown sugar and 2 tsp melted butter on top of the fish, the last six minutes of bake time and it was great! I used two tbs of canola oil instead of the non stick spray and I thought 425 was too hot so I cooked the fish at 395 and flipped it over halfway through! I'm sure its excellent with the panko breadcrumbs so I need to try that next time!

Best Tuna Casserole

This casserole really surprised me, I honestly thought it'd just be "Okay" but it turned out great. I substituted one can of cream of mushroom for one can of cream of chicken and when I added the peas they were completely frozen so after the dish was baked they were perfect. The chips and cheese were great on top and my dad told me it reminded him of a pot pie, I'll make this again for sure.
