Grilled Corn in Husks

This corn was delicious. I just realized that we forgot to add the Parmesan cheese before eating. It was still delicious without it. Served it with 'Hamburgers - It's in the Bun' from AR and cottage cheese.

Yum, a classic, simple to make cheeseburger. My only change was using white American cheese, as that is what I had on hand. We liked the toasted buns with the butter and mustard. I prepared a small batch of 'Tangy White BBQ Sauce' from AR to go with the burgers and served cottage cheese and grilled corn in husk to complete the meal.

Absolute Stress

I very seldom have a drink, but was in the mood for something fruity tonight. I used the alcohol listed, but only used half the peach schnapps and tripled the orange and cranberry juices. It was still plenty strong for me. I think I would have liked it with a little un-cola pop added just to give it some fizz. I will try that next time.

Luscious Lemon Triangles

Recipe Group Selection: 30, May 2015 ~ Wonderful! I halved the recipe and baked it in my stoneware pan. My DH tried them and said, "wow, they are very lemony". That is exactly what I was hoping for. I only had one lemon, so I had to use bottled lemon juice to equal the 2.5 oz. Nice flavor, simple to make, enjoyed by all. Thanks Lori, for sharing your recipe.

Rhubarb Shortbread Bars

A very good rhubarb recipe with a very good crust, that really taste like a shortbread. I knew before starting the recipe that I would be cutting back on the amount of sugar. We love the tartness of rhubarb and I knew with 1 1/2 total cups of sugar it would be very sweet. I baked the crust in a 9" pie pan rather than a square pan. I also only used 1/2 c. brown sugar, 1/4 c. white sugar and upped the rhubarb to 3 cups. We really liked the recipe, as did my dad and the neighbor man.

Poached Eggs Caprese

This was a delicious start to my morning. I'm not usually a breakfast eater, but had a craving for a poached egg today. I made this as written, but I have a poached egg pan and I used that to make the eggs. The flavor was delicious and liked the bit of pesto at the end. A recipe that I know I will be using again.

Jalapeno Popper Grilled Cheese Sandwich

We loved the flavor of this sandwich, but the texture of the crushed tortilla chips got very soft while cooking. The next time, I would make the sandwich and when it is done, open the sandwich and add the chips so that they would stay crunchy. We tried two different grill cheeses tonight and split them. Also had grilled Romaine, 'Greek Grilled Cheese' and 'Rob's Screaming Stuffed Jalapeño Poppers' from AR.

Greek Grilled Cheese

We tried two different grilled cheese sandwiches for dinner and shared half of each. This was our favorite, although the other one was very, very good. We are huge feta cheese eaters, so I was sure we would like this one. The flavor combination of this sandwich is delicious. We also had grilled Romaine, 'Jalapeño Popper Grilled Cheese Sandwich' and 'Rob's Screaming Stuffed Jalapeño Poppers' from AR for dinner.

Rob's Screaming Stuffed Jalapeno Peppers

Poppers are one of our favorite appetizers, and these did not disappoint! I downsized the recipe and used six jalapeños. The cream cheese mixture was delicious in these, but next time I'm going to up the basil and sundried tomatoes, just a little bit. I only used a half strip of bacon on each one and it was plenty to cover all the filling. We started them on the grill, cheese side down, once the bacon was cooked we flipped them. The reason we grill this way is when you start them the cheese mixture is still cold, so it is less likely to ooze out of the pepper. Once the bacon is crisp, we flip and grill the other side and the now melted cheese filling stays in the pepper. We had these along with grilled Romaine, 'Jalapeño Grilled Cheese Sandwich' and 'Greek Grilled Cheese' from AR.

Toss-Together Broccoli Salad

A very good broccoli salad that we thoroughly enjoyed, even my DH who isn't crazy about raw broccoli. I mixed the dressing up the night before so that the sugar would be totally dissolved when I was ready to use it. In the morning I mixed the broccoli, red onion and dressing together. About 30 minutes before dinner I added the cheese, bacon and sunflower seeds. At first I was a little worried as the salad seemed a little dry. But it was perfect when we had at dinner time. My DH even packed the leftovers for his lunch. It is the first broccoli salad that I've made (and, I've made many) that he's really enjoyed. I think it was that everything was coated with dressing, but not excess dressing. I did only use 3 TBS of white vinegar, and that is the same amount I will use next time. Served this with 'Ham and Pineapple Kabobs' from AR. Thanks Magesse, for sharing your recipe.

Ham and Pineapple Kabobs

Simple to make, but, oh so delicious! I found a package of ham in the freezer and had just bought a fresh pineapple. I made this as written, with the exception of the fresh, rather than canned pineapple. Along with the kabobs, I made a few skewers with onions and peppers to go with this and used the marinade on those, too. We really enjoyed this, and I know it is a meal I will be preparing again. Served it alongside 'Toss-Together Broccoli Salad' from AR.

Italian-Style Sausage and Peppers

Loved this meal! Along with the colored peppers, I added two jalapeño peppers, as we like this dish spicy. I had an opened jar of spaghetti sauce in the fridge, and that is what prompted me to make this recipe. I only used about 14 oz. of sauce, and it was plenty for us. This was served over whole-wheat pasta rather then in a roll, Italian cottage cheese and garlic bread. Thank you Alesha Walker, for sharing your recipe!

Amazing Cucumber Basil Salad

Quick, easy, delicious and I can make up in the morning and heat in the evening for dinner. I had leftover ham and whipped up three of these for dinner, in the morning. Wrapped in foil and put in the fridge. At dinner time, I baked for 15 minutes as they were lukewarm at the 8 minute mark. We really enjoyed these, very minimal prep and clean-up. I great idea for nights when you are going to be rushed or a night when you are having a large crowd for dinner. Yes, I would make these again! I served these with corn-on-the-cob and 'Sweet Potato and Black Bean Salad' from AR.

Sweet Potato and Black Bean Salad

This is delicious, but my jalapeño was REALLY a hot one. I cut the recipe down since there would only be two of us enjoying the salad. The flavors blended really well together. I realized after we had eaten the salad that I forget to add the chopped cilantro before serving. I made this up in the morning and we had it for dinner the same evening. Something different, and we love trying new recipes. Served this with corn-on-the-cob and 'Bunwiches' from AR. Thanks bfr610, for sharing your recipe. I looking forward to trying some of your other recipes.

Heavenly Cranberry Scones

LOVED this scone! I have many bags of cranberries in the freezer, and this was a wonderful use for half a bag. It is so much more light and airy than the heavy scones I'm used to. I made it as written with the ingredients, but split the dough ball into two portions. I did have to add extra yogurt to get the ball to come together. I used 2 additional heaping tablespoons and it easily formed. I made two smaller scones so I could take one in to work and they were done at the 15 minute mark. I would not hesitate to make this one again. Next time I'm going to add orange juice and orange zest. Lindsay, thank you for sharing this recipe. I loved it and can't wait until breakfast tomorrow, just so I can have another one! Definitely a keeper with this recipe.

Grilled Baked Potatoes

Simple, easy and delicious. I popped the potatoes in the microwave for 2 minutes, flipped, and 2 minutes more. I then sliced them into flats rather then wedges. I made these changes to hurry dinner along as it was getting late and darkness would soon be coming. Both changes worked great! I did season as directed in the recipe and they were fantastic. Topped with a little fresh chopped parsley and they were enjoyed alongside grilled veggies and a venison steak for DH using 'Emily's Marinated Venison Steaks' from AR.

Emily's Marinated Venison Steaks

This review is based on my DH's opinion only. He is the venison eater, I ate the grilled veggies and 'Grilled Baked Potatoes' from AR. He really liked the marinade and how it flavored and tenderized the steaks. This was the perfect amount for two steaks. I had to make two substitutions in the recipe to use what I had on hand - minced fresh garlic and onion in place of the dried. Thanks for sharing your recipe, Thorney. Next time, I will marinade a steak for DH and chicken for me so that I may enjoy it also.

Balsamic Grilled Zucchini

Delicious! I had already cut the zucchini in rounds when I discovered this recipe. Guess what? It tasted great cut this way, too! I appreciate that the grilling time is fast and the zucchini doesn't get mushy. Served this with 'Restaurant-Style Tequila Lime Chicken' from AR. Thanks LashGal, for sharing your recipe. Restaurant-Style Tequila Lime Chicken

A 5-star rating from my DH and I with this recipe. I mixed the marinade up in the morning and the chicken soaked all day. Luckily, the weather cooperated and we grilled the chicken. I decided to serve this over a salad, so I did not pop the chicken under the broiler before serving. We added the cheese when it came off the grill and that worked for us. The dressing is fantastic with this dish. In fact, I will be making the dressing up just to have with salads. I served this with lime tortilla strips rather than corn chips. A definite do-again recipe for our household. Served this with 'Balsamic Grilled Zucchini' from AR and we had one of the best meals that I've prepared in a while. Thanks Robbie Rice, for sharing your recipe. It is good stuff!
