Apple and Brown Sugar Corned Beef

Reviewed: Aug. 27, 2014
This review is for the meat only portion of this recipe. We really enjoyed the taste of this meat with the 3 ingredient broth. The apple juice gave the corned beef a wonderful flavor. The meat was very moist and sliced nicely. If I am pressed for time and cannot make the oven braised version of corned beef, I will definitely use this crockpot method. Looking forward to Reuben sandwiches with the leftovers. Served this with 'Alla Checca' and 'Tomato Bruschetta' both AR recipes. Thanks tonmeilleurami, for sharing your recipe. It is delicious!

Pepper Jelly Glazed Chicken

Reviewed: Aug. 26, 2014
This was delicious, although I think we would have enjoyed it more had I used boneless-skinless chicken breast. So much of the sauce was wasted when we pulled the skin off the chicken. The sauce had great flavor and and thickened up nicely as it baked. I will definitely make this again, just changing the chicken. We thought this would be a delicious sauce to use with kielbasa and peppers. I served this with 'Tomato Bruschetta' from AR and a tossed salad.

Tomato Bruschetta

Reviewed: Aug. 26, 2014
Recipe Group Selection: 23, August 2014 ~ I made a small batch using white balsamic vinegar rather than the brown balsamic. We really enjoyed this, but you do need to let the flavor meld for about 30 minutes. I was out of sweet red bell pepper, but I did have yellow on hand. Served this with 'Pepper Jelly Glazed Chicken' from AR and a tossed salad. We really enjoyed this version of bruschetta, and I know I will use this recipe again. Thanks, Joy Cowling Andrews for sharing.

Mexi Corn Dip

Reviewed: Aug. 19, 2014
This is a nice dip, for something different. We definitely thought it needed the 24 hours for the flavors to develop and blend. I took this as one of 2 dips to a lake party and one of 3 dips as a birthday treat to school. It was well received by both groups. Rather than use adobo seasoning, because I didn't have any, I used canned adobo peppers and the broth instead. This worked well. I served this with tortilla strips, but think it would work very well with celery sticks too.

Taco Foldovers

Reviewed: Aug. 19, 2014
I had one Pepperidge Farm® Puff Pastry in the freezer to use and a half pound of taco meat in the freezer. This was a delicious meal to make with the two of them. After making the 4 foldovers, they only took about 17 minutes to bake and brown. I did let them rest about 8 minutes before plating them. Served with lettuce, tomatoes, green onions, sour cream, jalapeños and fresh salsa. A very nice alternative to a taco shell.

Fantasio Bars

Reviewed: Aug. 16, 2014
I had a half of can of sweetened condensed milk to use up. This was a nice recipe to use it on. They are VERY rich, so I'm glad I only made a small pan. I took them to Girl's Night Out and they all enjoyed them.

Fire and Ice Salad

Reviewed: Aug. 14, 2014
This recipe has been sitting in my recipe box since May 2011. Glad I finally got around to making it. I loved it, my husband liked it. Because we like spicy foods, I upped the cayenne pepper to 1/4 teaspoon. We both loved the dressing of this dish and agreed it would make a nice salad dressing. My husband thought he would enjoy the salad more without the tomatoes, so he picked out all the other stuff and gave me his tomatoes. I thought the entire salad had a really nice flavor. Served this with 'Rosemary Ranch Chicken Kabobs' from AR, grilled Parmesan green beans, grilled garlic bread and 'Chocolate Stuffed Raspberries' a personal recipe from AR.

I mixed up and marinade in the morning, and the chicken marinated all day. It had great flavor and grilled up in about 10 minutes. Served this with 'Fire and Ice Salad' from AR, grilled Parmesan green beans, grilled garlic bread and 'Chocolate Stuffed Raspberries' a personal recipe from AR.

Cucumber Salad With Thai Sweet Chili Vinaigrette

Reviewed: Aug. 13, 2014
We liked this recipe, a lot, but I did cut the sesame oil down to 1/2 teaspoon. I made it up in the morning and they were flavor packed by dinner time.

Dijon-Roasted New Potatoes

Reviewed: Aug. 13, 2014
Personal Recipe from bd.weld ~ http://allrecipes.com/personalrecipe/62651043/dijon-roasted-new-potatoes/detail.aspx ~ A nice potato that complimented 'Pepperoncini Beef' sandwiches from AR. I used a sweet and spicy dijon as that is what I had on hand. The potatoes were nice and crisp at 50 minutes. Thanks bd, for sharing this recipe. We really enjoyed them.

Pepperoncini Beef

Reviewed: Aug. 13, 2014
This is one of our favorite sandwiches from this site. It is so nice putting it in the crockpot and coming home and having dinner ready. I used mini Ciabatta rolls instead of the hoagie buns this time. Served the sandwiches with Dijon-Roasted New Potaotes, and a gelatin salad.

Mad Hatter Salad

Reviewed: Aug. 12, 2014
This is a very good salad that went well with 'Asian Barbeque Burgers' from AR. To help cut the calories, I did not brown the nut/noodle mixture in the butter. Instead, I toasted them in the oven for 10 minutes at 250°. I made a half a recipe using an partial head of cabbage that I sliced as thin as I could get. The broccoli was a nice addition and I added a little carrot, just for color.

Asian Barbecue Burgers

Reviewed: Aug. 12, 2014
What a fantastic, flavored packed burger! I made as written, only subbing fresh ginger for the ground ginger. Mixed them up in the morning and formed the patties to let the flavors meld. Before grilling, I put a hole in the center of the meat so the burger (85/15%) would not shrink up. It worked like a charm and the burger grilled to the same size as the bun. Ten minutes per side was the perfect timing on our grill. Saveur, another AR member, suggested this burger and I'm so glad I saved it. The burgers were served with 'Mad Hatter Salad' from AR and fresh fruit. It is an Asian based salad. It went really with the burgers. Occasional Cooker, you have another award winning recipe to add to your collection. Thanks for sharing.

Grilled Sweet Onions

Reviewed: Aug. 10, 2014
This was a great side dish to 'Smothered Filet Mignon', 'Grilled Rock Lobster Tails' both from AR and grilled Parmesan green beans. I only made one onion for my husband and I to share. The flavor was very good, but the beef bouillon made them salty. I will made them again, but will be using low-sodium bouillon. The onion I used wasn't huge, and it took about 35 minutes. It was perfectly cooked without being the least bit mushy.

Grilled Rock Lobster Tails

Reviewed: Aug. 10, 2014
This was our first time for fixing lobster. Well, actually my husband grilled it and ate it. He really liked the marinade mix that he basted the lobster with. The lobster tails were very small so he grilled for about 10 minutes. He said the end result was very moist and full of flavor. They were served with 'Smothered Filet Mignon', 'Grilled Sweet Onion' both from AR and grilled Parmesan green beans.

Smothered Filet Mignon

Reviewed: Aug. 10, 2014
Fantastic recipe! I am not a steak eater, but once a year will eat a filet. This was our first attempt at grilling them at home. My husband did a great job with the grilling of the steaks. The instruction/heat time was perfect for a medium-rare steak. The flavor was outstanding, and the bleu cheese was a perfect topping. Served these with 'Grilled Rock Lobster Tails', 'Grilled Sweet Onion' both from AR and grilled Parmesan green beans. Definitely a 5-star meal tonight.

Pork Cutlets with Cranberry Wine Sauce

Reviewed: Aug. 9, 2014
A nice different way to enjoy pork cutlets. I didn't use the oven at all for the recipe. I just used 2 pans on the stove top. I made the sauce in one pan and browned the pork and kept it warm in the skillet until the sauce was finished. I then proceeded with the recipe using Pinot Grigio for the white wine. I didn't have fresh sage, so I used fresh basil. This was served with 'Onion Rice' from AR and a tossed salad. Everyone enjoyed the meal.
