Momma Moots' Pork and Pierogies Casserole

What a great recipe to use up leftover pork loin, which is what I used. I used all the ingredients the recipe called for, just in different forms. My pork was leftovers, I made ‘Cream of Anything Soup’ a personal recipe from AR – mine happened to be Cream of Pepper Soup using green and yellow peppers as we do not care for mushrooms, corn that I had froze rather than canned and Pepper Jack Cheese as I was out of Cheddar cheese. This came together quickly since my pork was already cooked. I just mixed up everything in the pan that I boiled the pierogies in and poured it in a casserole dish. This was hot and delicious in 35 minutes. I did let it rest for about 8 minutes before serving to let the cheese and soup set up just a little. I served this with ‘Coleslaw with Grapes and Spinach’ from AR and we had a wonderful dinner. DH & DS already called “dibs” on the leftovers. Thanks 3Scorpios for sharing this recipe. We love pierogies and I’m always looking for new ways to fix/serve them.

Cream of Anything Soup Mix

Personal Recipe of: lucylove ~ This is a delicious recipe to use in place of store-bought canned soup. I was making 'Momma Moot's Pork and Pierogies Casserole' for AR and needed 1 can of soup. I made this recipe using 1/2 c. of pork broth and green & yellow peppers, making my soup - Cream of Pepper Soup. It was so good and packed with flavor. I did a use little more milk to achieve the creaminess that I was looking for. I liked this recipe so well that when I have stock or broth leftover I will be freezing it in 1/2 cup amounts just to use in this recipe. Thanks lucylove for sharing this recipe. I like that I can control what goes in my cream of soup!

Zucchini Brownies

Nice, moist, chocolatity brownie – just what I was looking for. The batter for this was very dry and I was worried as I was putting in the pan, but it baked up nicely. I added the walnuts to half the pan and left the other half without. The frosting is very good on this recipe and worth repeating just to lick the bowl again! Nice way to sneak vegetables in to your dessert. I will be making this again, before the zucchini season is over.

Onion and Sausage Pizza

Quick, simple, yummy pizza. I had 4 French bread rolls that I was wanted to use up. I cut each one in 1/3's and used that rather than a loaf of French bread. My family doesn't eat olives, so in place of those I used diced green peppers. I followed all the other instructions as written. This was a very quick meal to prepare as I had browned sausage in the freezer. I think the key is to not skip the step of toasting the bread under the broiler before adding the toppings. I paired this with 'Coleslaw with Grapes and Spinach' from AR and we had a meal that everyone enjoyed.

Coleslaw With Grapes and Spinach

My family loves all kinds of coleslaw - creamy, oily, vinegar base, mayo base.....and this one. This is such a change from others that I have tried. To save time I used bagged cabbage and bought broccoli slaw instead of cutting broccoli heads in to thin strips. The addition of the spinach and grapes was very noticeable in this salad we really it. I mixed it up in the morning and it was well blended by dinner time. I liked that the spinach wilted down in the dressing. I served this with 'Onion and Sausage Pizza' from AR and we had a delicious meal.

Orzo and Tomato Salad with Feta Cheese

This recipe has been sitting in my recipe box for over 2 years. I made it omitting the olives as we are not fond of them. Orzo is a pasta choice that my guys have not decided if they enjoy it or not. Every time I make something with it they wonder what it is. We love fresh tomatoes and feta is one of our favorite cheeses, so I had hopes with this recipe. Everyone liked it and it went well with ‘BLT Wraps’ from AR.

Hearty Sloppy Joes

I did use venison rather than hamburger, but kept everything else the same. I needed to feed a lot of people so I made 4 lbs. This fed everyone who helped move our son in to his first home. This was VERY well received by everyone and my son was thrilled he had some leftovers. Most definitely will be using this recipe again. Thanks, Philmont!

Spinach Alfredo Sauce (Better than Olive Garden®)

Recipe Group Selection: 31, August 2013 ~ This is a delicious Alfredo sauce that I served over tri-colored veggie pasta. I did use fresh spinach rather than frozen. My sauce was thinner than the actual recipe, but that was by choice. I used milk rather than heavy whipping cream. The results were a dish that we really enjoyed, and my husband is not a fan of spinach! This is the first recipe he has ever complimented me on that contained spinach. That say A LOT about the recipe. Thanks nbrock_85 for sharing your recipe.

Angie's To-Die-For Banana Bread

Looking for banana bread that used buttermilk, this is the one I chose. It is very good and moist, just how it should be. I made it into five small loaves rather than 2 larger loaves. The flavor is good and it freezes nicely. I added walnuts to 3 of the loaves and left the other 2 without. Our favorite way to eat banana bread is toasted as it really brings out the banana flavor. This bread did not disappoint as toasted banana bread.

Creamy String Bean Soup

Looking for a soup that used green beans, I came across this recipe. It called for canned green beans, I used fresh. I just started the beans at the same time I started the potatoes and threw the onions in at this point also. The recipe doesn't tell you how much water to use, so I used enough to completely cover all the vegetables. I used Greek yogurt in place of the sour cream as that is what I had on hand. Make sure you remove the pan from the heat and let rest about 5 minutes before you add the sour cream. That will help with the small curdling white pieces from appearing. They don't hurt to eat, they just don't make the soup pleasant to look at. I cooked Polska Kielbasa in a separate pan and added it right before serving. This soup had good flavor and was a nice new way for my family to enjoy green beans. I paired this with 'Fyre Lake Cornbread' a personal recipe from AR. We had a nice dinner on a cool evening. This recipe has been "faceless" since December 2002.

Fyre Lake Cornbread

I went to get my can of creamed corn and it was whole kernel, so I used that instead. The cornbread still was wonderful. It paired very nicely with 'Creamy String Bean Soup' another recipe on AR. Cucumber Melon Salsa

Recipe Group Selection: 27, July 2013 ~ Once again I am behind on making the recipe group pick - but so glad I tried this one. Loved the combination of the fruits, veggies and spiciness of the jalapeños. I served this this flour tortilla chips and guacamole tortilla chips. It was great with both, but I can see where this would lend excellent flavor for chicken, pork or fish dishes. With fresh cantaloupe still in season, I will be making this recipe again. I made this recipe for my husband as I am not a fan of hot tuna. He really enjoyed this dish. I did sub frozen peas for the mushrooms as he does not care for them. It did stay nice and creamy while baking and that was a plus. I also made this for the AR August Faceless Recipes on Pinterest.

Jan's Chocolate Chip Pound Cake

I'm not big on chocolate chips in my food with the exception of chocolate chip cookies. Well, I can now add this recipe to the list. There was too much batter for my Bundt® cake pan so I used my angel food cake pan. This baked up so high (3 3/4") and beautiful in the pan. It sliced up perfectly without crumbing up at all. I took part of the loaf to a young man at Butler University and sliced the rest and froze individually wrapped pieces to put in lunches. Jan, this is a winner and one that I will be sharing the recipe and will be making again. I'm so glad that Christina pointed it out. :o) MMMmm MMMmm good!!

My Grandmother's French Dressing

Outstanding French Dressing. My family loved this dressing on 'Taco Pasta Salad' from AR. In fact, I've made this 3 times now. It last in the fridge for quite a while. My guys think they don't like bleu cheese, I just don't tell them what I put in the dressing. I love making my own salad dressing, so that I know what goes it them and this recipe is definitely worth repeating.

Taco Pasta Salad

Family loved the uniqueness of this taco salad having pasta with it. I always have taco meat made ahead and froze in 1 lb. packages for quick meals. It came in handy with this recipe. I mixed part of the corn chips in the recipe, and saved some to add to the top of the salad when served. I made 'My Grandmother's French Dressing' from AR for the French dressing the recipe called for. We had a delicious meal that will be repeated.

Fresh Peach Trifle

Recipe Group Selection: 03, August 2013 ~ WOW this is a good one. I didn't get this made last week, due to being in Texas. I'm so glad I still went ahead and made this. I was sooo disappointed in the taste of my peaches. The lemon juice and zest did help, but that is why I added some red raspberries. The next time I make this I will double the yogurt mixture. It had great flavor, I just wish I had more of it. I served this to 7 people and no one guessed the yogurt mixture, although all of them loved it. This could be so versatile by mixing up your fresh fruits and yogurts. As is, this is wonderful and I will be making it again before the fresh peaches are gone. I just hope for better peaches the next time. Another plus to this recipe is there is no whipped topping in it. I like "real" whipped topping, but this is wonderful with the yogurt mixture. A great pick last week. :o)

Shredded French Dip

This meat cooked up truly - fork-tender. It was in the slow cooker on high for 5 hours. I lifted the meat out, trimmed the fat layer and shredded with 2 forks and returned the meat to the juice until I was ready to serve it. We had this with 'Slow Cooker Creamed Corn' and 'Cheesy Ranch Potato Bake', both recipes from AR.
