Aunt Mariah's Lemon Sponge Cups

Recipe Group Selection: 15, February 2014 ~ The lemon dessert was beautiful when it came out of the oven, but within 5 minutes they all fell. I don't think it affected the taste, but it sure did the appearance. I liked the taste and texture, but my family and extended family did not. I think the lemon taste comes through a little stronger when the dish is warm as opposed to room temp. I'm glad I tried, and I liked it, but doubtful I will be making it again as I don't need to eat 6 bowls!

Spaghetti Pizza I

Great dinner! What a quick and simple meal to put together. I use pre-cut spaghetti in place of breaking my own and used fresh basil as opposed to dried. This recipe is so versatile that you could add whatever your favorite pizza toppings are. i.e. onion, green peppers, mushroom, olives, etc. We had company for dinner and they loved this dish. I served a tossed salad and garlic bread with this.

Dad's Working Man's Macaroni Salad

This recipe has been in my recipe box for a long time. Decided to give it a try. The guys liked it better than I did. It is definitely a much heartier macaroni salad than most. It was creamy the first night I made it, but as with most pasta, it soaked up a lot of the dressing and I had to add a little more the following day. All-in-all a good recipe that would go over well at a get together.

Savory Cheesy Polenta

Polenta......a new dinner item for us. sassyoldlady suggested this recipe, so I halved the recipe and made half of another recipe. I had one sweet onion and one purple onion. The cheese I used was a combination of sharp cheddar and white sharp cheddar. All of these ingredients worked really well together. I baked in my toaster oven and that worked well. DH added Tabasco® to his and liked the zip that it added. Thanks BSM for your recipe, and thanks sassy for pointing it out.

Baked Polenta with Fresh Tomatoes and Parmesan

Polenta....something new for us tonight. I had two different polenta recipes that I wanted to try tonight, so I made a half batch of each. This was nice and moist with crispy, chewy edges. I liked the outside of this dish and DH liked the inside of the dish. Other than halving the recipe, I made as written and will do so the next time.

Rice and Ham Salad

Trying to find a recipe that would use up some ham and cauliflower, I came across this recipe. It has been "faceless" since at least May 2000. This did not go over big in our house. It had kind of an odd texture and taste combination. I think the oddness of taste came from the dressing. Need to find a way to use up the leftovers. I might take it to school, they eat anything there!

Mozzarella Puffs

Great, simple, cheesy biscuit. I made these to go with 'Honey Glazed Pork Tenderloin' and 'Honey Roasted Red Potatoes' both AR recipes. I used a mozzarella cheese stick cut in thirds. Out of the 10 biscuits, 6 of these leaked the mozzarella out. It didn't change the taste, just the appearance. With the items I served with the biscuits, I chose to not use the pizza dipping sauce. I loved how simple these were to make, and will be making them again. I will work on sealing them a little better next time.

Honey Roasted Red Potatoes

Quick, easy and delicious potatoes! I fixed 'Honey Glazed Pork Tenderloin' and these potatoes went nicely with the meat. I made a batch and a half so that we would have leftovers. I didn't have red potatoes on hand, but Idaho's worked great. The skins were nice and tender and the glaze was very good. I also made 'Mozzarella Puffs' to go with dinner and everything tasted delish!

Cornbread Biscotti

HotGrandma - this is the BEST recipe! I now make cornbread just for the sole purpose of making your recipe. My DH likes cornbread, but could really do without. He LOVES this recipe as much as I do. I've made it with the garlic, without the garlic, and the last time with just a little bit of brown sugar and cinnamon. All three ways were delicious! Thank you for sharing your recipe.

Kiss From a Rose (Rose Sauce)

Recipe Group Selection: 08, February 2014 ~ I thought the sauce had good flavor, but DH, not so much. I made a half batch of sauce in the morning and slowly reheated it in the evening and added the parmesan cheese at that point. I served this with steamed cauliflower and garlic toast. I think I will repurpose the leftover sauce into a small pan of lasagna.

Valentine's Cinnamon Heart Shortbread Pan Cookies

Another delicious version of this cinnamon red hot cookie. I used 5 cups of flour in the batter and baked for about 37 minutes. The jelly roll pan makes for a nice thick cookie that I opted to cut 2 ways. I used a wavy blade to cut the squares, although you cannot tell from the picture, and a small heart cookie cutter to cut out the insides. My parchment paper fit perfectly on the inside of my pan making it difficult to lift out. Instead, I just cut the cookies in the pan and lifted them out to the cooling rack. Ciabatta Bread

My husband thought this bread was perfect. He loved the chewiness that it offered. I made half of the dough into a loaf of bread, and the other half in to 6 rolls to be used with the recipe 'Ultimate Steak Sandwich' from AR. They proved to be a great fit with the sandwiches. The bread toasted up really nicely in the toaster for a breakfast treat. I will be using this recipe again.

Ultimate Steak Sandwich

A delicious sandwich, made even better with homemade 'Ciabatta Bread' from AR. Not a huge fan of round steak, I had a package in the freezer that needed to be used. I'm glad I tried it on this recipe as it was very well received. I really liked the mayonnaise spread that was added to this. My hubby liked the chewiness the bread added to the overall taste. I made this as written and added a slice of tomato before serving. A really good sandwich that I will be making again.

Chicken Broth in a Slow Cooker

Liquid Gold! This is my favorite, super easy way to make chicken broth. I put a chicken carcass in the crockpot at night, sleep, and when I get up the broth is finished. Can't get any easier! I froze in 2 cup amounts.

Easy Chicken Taquitos

The recipe as written is good, and I made a few as written. But, I ended up adding some sour cream to the remaining chicken mixture, as I was having a hard time keeping the rolled taquito together. I used Chipotle Tabasco® for the flavoring, and it offered wonderful taste. I heated 2 shells at a time in the microwave for 10 seconds rather heating them on the stovetop. Quick and easy to make. I served this with a personal recipe from AR, and we had a nice meal.

Creamy Chile Rice

PR of: CHRISTYJ ~ What a great rice side dish. We really enjoyed this one. I ran out of whole tomatoes, but had some cherry tomatoes to use up. I just cut them in half, and it worked. The recipe should read 1/2 "cup" of sour cream. I served this with 'Easy Chicken Taquitos' from AR. I had 2 lime wedges to use up, so I squeezed the lime juice over the top before I baked the dish. I'm not big on rice dishes unless it is with Asian dishes, but I know I will be making this one again.

Lemon Blueberry Custard Pie

Working backwards in my recipe box, this was the next recipe up for the making. It had been in my box since January 2011. This pie had a very unique texture to it. It really wasn't custardy, but I'm not really sure how to describe it. The lemon and blueberry flavors did come through and that was nice. But, the texture kept us from really enjoying this pie.

Reuben Crescent Bake

Recipe Group Selection: 01, February 2014 ~ A Reuben is my favorite sandwich, so I knew I had to make this recipe. Reading Christina's review, I decided to use 2 tubes of crescent rolls, to make the dough easier to spread. I baked this in a Pampered Chef® 8 1/2 x 11 1/2 stoneware pan and this was a perfect size for 2 tubes crescent rolls. I increased the ingredients to equal a recipe and a half. After mixing up the dressing and sauerkraut, I added a little extra dressing to make it a little creamier. I let the recipe rest, as the instructions called for, and this cut and plated beautifully. The crescent rolls make this sweeter than a traditional Reuben, but it is still a very good recipe, worth making. I forgot about the egg wash, and added a few caraway seeds to the topping.

My Favorite Thousand Island Dressing

PR of: Francesca ~ This is a very good recipe with 5 simple ingredients that I always have on hand. I made this dressing to use in 'Reuben Crescent Bake' from AR. I made extra so we could use it as salad dressing, also. This is a very good recipe, that I will be using again. ~

Ham Sauce

Nice addition to ham. My mom made this delicious sauce and she had a lot leftover. After giving it to me, once our ham was gone, I made a small batch of macaroni salad and used this sauce as the dressing.
