Simple Pina Colada Muffins

Recipe Group Selection: 05, April 2014 ~ Delicious and simple muffin. I baked in my mini muffin pans and got 36 from a single batch. Like Shearones, they were done in 12 minutes. Because my guys aren't crazy about coconut, I put the 3/4 cup in the batter, but only added it to the tops of 12 before baking. Since I was making smaller muffins I used tidbits rather than chunks. I drained the pineapple really well and used the pineapple juice to make a batch of gelatin. My DH must have really liked them, coconut included and all, because 2 minutes out of the oven and he was eating his first one. Five minutes later and he had eaten 3! Basic Pizza Dough

PR Recipe of: *Sherri* ~ I made this dough up in January, in the bread machine using 3 1/2 cups AP flour. After it was finished, I vacuumed sealed the dough and put it in the freezer. Now in April, I pulled the dough out of the freezer and put in in the fridge overnight. After it thawed, I let it rise and then formed in to the pizza crust. I used mozzarella cheese sticks to make a stuffed crust pizza. I par baked the crust with the cheese for 5 minutes at 400°. I then topped with pizza sauce, cottage cheese, pepperoni, onions, green peppers, sausage, fresh sliced tomatoes, banana pepper rings and shredded mozzarella. Put it back in the oven at 375° for 20 minutes. The result was a delicious pizza with a crust that was great to work with, that I will be using again! Thanks Sherri!

Jan's Wheat-N-Honey Sandwich Bread

Another delicious bread by Jan! After reading about this on thebuzz, and having a new loaf pan, I was excited to try this bread. I put all the ingredients in the Kitchen Aid because there was too much dough for my bread machine to handle. After it was done blending, I kneaded for a little put and put in the pan to rise. It rose beautifully and baked up great - just like a loaf of sandwich bread. After it cooled, I sliced it with an electric knife. We like it as bread, but really enjoy it as toast. Homemade Baking Mix

I scaled back the recipe to make 3 cups of this mixture to make 'Beer Muffins' from AR. It worked fantastic. Really no need to buy a pre-mix anymore. To make 3 cups: 2 1/2 c. + 2 TB flour; 1/4 c. + 2 t. dry milk; 1 TB + 1 1/4 t. baking powder; 1 TB + 1/2 t. sugar; 1 t. salt; 1/4 c. + 2 t. shortening

Greek Seasoning Blend

I needed Greek seasoning to make 'Greek Pulled Pork' from AR. I like making my own seasonings as I can control what goes in them. This worked nicely on the pork and I have some left for other recipes. I did not blend in a grinder for a finer texture. I just mixed everything together and put in a shaker spice jar.

Grandma Jackie's Valentine Cake

Made this cake for Valentine's day and it was enjoyed by all. I poured half a pan with nuts and the other half without. I had problems with the cherries sinking to the bottom. It didn't affect the taste, just made the sliced appearances a little off. I frosted this with 'Grocery Store Frosting' from this site and that added a wonderful richness to the cake.

Sweet and Oh So Spicy Kielbasa

Delicious, quick and easy dinner. I had fresh pineapple, so I used that in place of the canned. Otherwise, I followed the stovetop instructions and it thickened up nicely. Served this over sticky rice and added a simple green salad. We enjoyed a nice dinner.

Cranapana Bread

Another great quick bread that uses apples, bananas and cranberries. Not having self-rising flour, I made my own with a recipe from this site and it worked perfectly. Rather than one large loaf of bread I put this in 3-mini loaf pans, two with nuts, one without. Since the pans were smaller, they were done baking in about 40 minutes. My family's favorite way to eat quick breads is toasted. This bread was no exception. They enjoyed it as bread, but the majority of it was toasted. This also froze and thawed nicely. Definitely a bread worth trying.

Holiday Sweet Tart Smoothie

Love the fresh, simple taste of this smoothie. Also love the fact that there is no sweeteners, sugar, yogurt, milk, etc. ~ fruit, water & ice. Keeping it simple, yet full of flavor with VERY few calories. I have made this 3 times now for a guilt-free breakfast drink. There are many bags of frozen cranberries in my freezer, so I see a few more of these in our future. Thanks, Linda (LTM) for sharing. I love taking a tall insulated glass of this smoothie to school with me. It stays nice and icy for a long time. Sooo delicious!

Cottage Pudding (Cake for Strawberry Shortcake)

This is a good shortcake for strawberries. It rose up nicely and baked well, although I had to bake for 16 additional minutes as it was no where near done at the 25 minute mark.

Amy's Barbecue Chicken Salad

Delicious, full-meal dinner salad. I made as written, but added avocado and cucumber because there was a half of each in the refrigerator that I wanted to use up. The dressing is one of our favorites. A popular restaurant makes this dressing for a Wildfire Chicken Salad, and the dressing recipe for this recipe was spot on. As the weather gets nicer, our eating habits change and this salad will be a wonderful addition for a lighter summer dinner. Thanks, AMYEH for sharing.

Cranberry Coleslaw

Yummy! I halved this recipe and didn't cut the cranberries in half. I did add the sugar and let the cranberries marinate all day. The sugar from the cranberries and the mayonnaise made a very nice dressing for this coleslaw. My husband really enjoyed this and asked for the leftovers for his lunch. This was served with 'Donair' from AR and we enjoyed a terrific meal. Thanks WINNIFRED for sharing your recipe. I look forward to making it again. I'm glad I have multiple bags of cranberries in our freezer! :o)

Maritime Donair Sauce

Not ever having anything like this to compare the sauce with, we loved it. I made 'Donair' from AR and used this sauce to top the meat/veggie/pita combination. The sauce was made in the morning, and it was a nice thickness in the evening at dinner. Liking the taste of the sauce, I'm going to use the leftovers as a coleslaw dressing. Wow - something totally new, but yet similar to a gyro. We loved this recipe. I made the meat portion of this recipe using 3/4 a pound of ground beef - and added 1/2 t. oregano & 1/2 t. Italian seasoning. I also opted to use the cayenne pepper. I mix the meat by hand for about 5 minutes to really have the spices mixed in and to have the meat form without falling apart. Since I used a lot less meat, I formed into a rectangle and baked at 300° for 45 minutes in a toaster oven. Once the meat cooled I refrigerated it all day. I then proceeded with the recipe in the evening. I purchased homemade pitas from our favorite Greek restaurant to serve this on. I made 'Maritime Donair Sauce' from AR for the topping. My family loved the taste of this meat and this meal. It was so simple to make and I like that you need to make it ahead of time so that the meat will slice in thin pieces. We topped with fresh tomatoes, fresh onion slices and grilled onions. DS also topped his with some feta cheese and thin slices of lettuce. 'Cranberry Coleslaw' from AR was our side dish tonight. Thanks, SABMAN for sharing your recipe. I cannot wait to make this again for my entire family. I know they are all going to love it!

Lengenberg's Boiled Potatoes

This recipe was a hit before I ever made it. My guys love boiled potatoes. I didn't have yellow-flesh potatoes, so I used what I had. Super simple to make and it yields a potatoes with a lot of flavor. I added 1 tsp. of salt to the potatoes rather than a pinch. The potatoes were served with 'Autumn Apple Salad', Apricot Brown Sugar Ham' and 'Beer Muffins', they are all AR recipes.

Apricot Brown Sugar Ham

I didn't have a spiral ham, but did have a 2 1/2 pound small ham. I made slices in the ham and followed the recipe. The results were a nice, moist ham, with a sweet flavoring. My family enjoyed this with 'Autumn Apple Salad', 'Lengenberg's Boiled Potatoes' and 'Beer Muffins', all AR recipes.

Beer Muffins

I was out of baking mix so I made my own using 'Homemade Baking Mix' from AR. Knowing my guys would not be crazy about the raisins, I made this recipe three ways. Without raisins, with dried cranberries, and with dried cranberries and cheddar cheese. They were a fan of all three. I baked in greased mini muffin pans for 13 minutes and it yielded 36 muffins.

Autumn Apple Salad

What a great discovery with this recipe. It has been in my recipe box for over 2 years, and it has been faceless since November 2001. Only having sugar-free orange gelatin on hand, that is what I used. I also decreased the sugar to 1/3 cup because my pineapple was in heavy syrup, which has additional sugar. My family thought this salad was very good and that I should make it again. I poured half in a 11x7 pan without the nuts for my son and added toasted almonds to the rest of the salad for my husband and I. I liked the 11x7 pan because it gave me the thickness I wanted in the salad. It set up well and cut/served nicely. I cannot wait to make this again using a sugar-free lemon gelatin. Curly-Q Grilled Sausages

Wanting to use up a package of Italian sausages, I came across this recipe. I too, didn't get my cuts close enough to get the true spiral appearance. But, that didn't change the taste of the sausages. I had sautéed some onions that we enjoyed with these. Also with dinner, we had 'Grilled Corn with Cilantro Lime Butter' and 'Napa Cabbage Salad with Lemon-Pistachio Vinaigrette', both AR recipes. Dinner was quite good tonight. Thanks, Chef John.

Brined Bratwurst

Brats that were super easy to prepare and had a nice taste. I think what I enjoyed the most was that the skins stayed moist while grilling. The balsamic vinegar did make the brats dark in color. The onions were soft after cooking with the brats, so I skipped the butter sautéing step. This was served with 'Grilled Corn with Cilantro Lime Butter' and 'Napa Cabbage Salad with Lemon-Pistachio Vinaigrette', both AR recipes.
