The Best Brown Butter Salted Rice Krispies® Treats

Reviewed: Mar. 23, 2015
I love Rice Krispy® Treats - in fact, they are one of my two food 'guilty pleasures' in life. This is a delicious recipe. As soon as you add the 2 tablespoons of bourbon to the pan, it bubbles up and you don't taste it in the recipe. The sea salt.....you do taste and I liked it! I took these to girls night out and no one detected the bourbon but everyone detected the sea salt. Needless to say, I came home with an empty container. Yes, this is a recipe that I would make again. Thanks voraciousgirl, for sharing your recipe. I've shared it too!

Savory Sausage Pancakes

Reviewed: Mar. 23, 2015
Recipe Group Selection: 21, March 2015 ~ Delicious and filling! We had these pancakes for dinner, along with fried potatoes, over-easy eggs and orange juice. The batter is very thick, but it rises beautifully when cooking. I made a half-batch and it made 15 nice size pancakes. We have 9 left over breakfasts this week. I liked adding the sausage and onions to the batter. It really made for a very hearty pancake.

Simple Broiled Grapefruit

Reviewed: Mar. 22, 2015
r wasn't sure I would like a grapefruit heated/broiled, but I did. I just used one grapefruit and broiled it in the toaster oven for 8 minutes. It adds a different dimension to the grapefruit and it is a method I will use again.

Reuben Pizza

Reviewed: Mar. 22, 2015
What a great way to use up leftover corned beef! We loved this pizza. I didn't measure the ingredients, just eye-balled them. I had one loaf of bread dough in the freezer and baked that according to the recipe. Any homemade crust would work well with this recipe. I also topped the pizza in the order given, only using corned beef I made for St. Patrick's day and I didn't rinse the sauerkraut. I wanted the flavoring of the juice, so I drained it and added it. I also had one green onion left in the fridge, so I diced and added it to the mix. I opted not to use the diced pickle since the thousand island dressing had pickles in it. The flavor was indeed that of a Reuben (my favorite sandwich) and a pizza we really enjoyed that I will be making again.

Jalapeno Popper Mac and Cheese

Reviewed: Mar. 19, 2015
FANTASTIC mac n' cheese. Hubby and I LOVED it! We had a jalapeño macaroni and cheese from a local restaurant and hubby hasn't quit talking about it. I surprised him with this recipe and he likes it better than what he was served at the restaurant. I mixed the sauce up in the morning, cooled it down, refrigerated it all day. In the evening, I just slowly warmed it up while I cooked the pasta and then proceeded with the recipe. It was warm, gooey, cheesy, spicy and nothing but awesome. I do believe this is my favorite recipe I have made this year. Thanks Christina, for sharing your recipe. I certainly hope it gets published.

Saint Paddy's Irish Sandwich

Reviewed: Mar. 19, 2015
Recipe Group Selection: 14, March 2015 ~ A nice twist on a traditional Reuben sandwich. I used leftover 'Stout Slow Cooker Corned Beef' from AR for the meat and two different kinds of rye breads. We did like the spicy brown mustard for a different condiment. I added a thin slice of Swiss cheese to the sandwich and popped them under the broiler until melted. Where we are from a corned beef sandwich with cole slaw is called a Rachael.

Pesto Spaghetti Squash

Reviewed: Mar. 18, 2015
A nice change for spaghetti squash. I don't care for mushrooms so I subbed diced Roma tomatoes. I had one very small spaghetti squash, so I scaled everything back. I enjoyed this dish and will make it again, sometime.

Creamy, Lemony Potato Salad

Reviewed: Mar. 18, 2015
Very nice potato salad that went well with grilled bacon wrapped turkey tenderloins. I mixed it up in the morning and we enjoyed it that same evening. It had a nice creamy texture, but we didn't get a lemony flavoring. With potato salad season quickly approaching, I know I will be making this one again. Thanks Bren, for sharing your recipe, we enjoyed it.

Irish Tea Cake

Reviewed: Mar. 17, 2015
A nice ending to our 2015 St. Patrick's day meal. I only had an 8" pan, so I used it and it took 35 minutes to finish baking. I served it with thawed blueberries. I think this cake would make an excellent base for strawberry shortcake. We had 'Stout Slow Cooker Corned Beef and Veggies' and 'Amazingly Easy Irish Soda Bread' for dinner, both from AR.

Amazingly Easy Irish Soda Bread

Reviewed: Mar. 17, 2015
I halved this recipe (used 1 small egg) to make a small loaf of bread for our St. Patrick's day dinner. I brushed the loaf with the butter/buttlermilk mixture every 15 minutes during the baking time. It baked up beautifully and had a nice flavor. Served this with 'Stout Slow Cooker Corned Beef and Veggies' and 'Irish Tea Cake', both from AR.

Stout Slow Cooker Corned Beef and Veggies

Reviewed: Mar. 17, 2015
Pressed for time this St. Patrick's day, I wanted to utilize the slow cooker. I used one 12 oz. Deadeye Stout by Triton Brewing Co. and didn't measure the brown sugar. I just patted the meat dry and added the sugar. I probably only used 3/4 cup total. We really liked the taste of this meat, and 8 hours was perfect for the meat, but too long for the vegetables. I was worried the beer would make the dinner bitter, but it wasn't, at all. A nice meal that I would make again, only adding the vegetables about 1 - 1 1/2 hours after starting the meat. Thank you, COUNTRYRAY, for sharing your recipe.

Loaded Egg Salad

Reviewed: Mar. 11, 2015
Made this for lunches this week. I did leave out the pickle relish as we are not fans, but kept everything else the same. I liked that it doesn't get watery after a couple of days, but it does have a odd orange hue due to the paprika. We enjoyed it over lettuce, on two-tone rye toast, and stuffed in a tomato. This worked well for our lunches and I will make it again, even adding the paprika. Thanks SunnyDaysNora, for sharing your recipe.

Hawaiian Ham Skillet

Reviewed: Mar. 11, 2015
We really enjoyed this simple dish using leftover ham. My parents enjoyed it also. I used fresh pineapple and canned pineapple juice in place of canned pineapple and added some sliced onion. The dish comes together quickly, we liked it, and I will be making this one again.

I made this exactly as written and we liked it, but didn't love it. For us, this was a little to soft, even after baking it 10 extra minutes.

Georgia Cornbread Cake

Reviewed: Mar. 10, 2015
The name of this dessert is pretty deceiving. It is really a delicious blonde brownie and it taste nothing like cornbread. I am a brownie edge person and this dessert didn't disappoint. It is chewy on the edges and soft in the middle. The self-rising flour ( I used 'Self-Rising Flour' from AR) worked great and the batter rose beautifully and held it shape once the pan was removed from the oven. I cut the pan with a plastic knife so that it would cut nice clean pieces. Next time, I'm going to toast the pecans before adding them to the batter. Patti'sPantry, thank you for sharing your recipe. It is a winner in our house.

Rice Elena

Reviewed: Mar. 9, 2015
Recipe Group Selection: 07, March 2015 ~ LOVED this dish! I made a half a batch using sticky rice. I didn't measure the cheeses just eyeballed and know I used a little less of each. It is nice and creamy and went really well with 'Fajita Quesadillas' and 'Quesadilla Jalapeño Spread', both from AR. I'm sharing this recipe with my mom and SIL's as I know they will all love it. Thanks bryantgal31, for sharing your recipe. It is a keeper.

Quesadilla Jalapeno Spread

Reviewed: Mar. 9, 2015
A nice spread with a kick. I used pickled jalapeños rather than canned. The next time, I would also like to add some fresh jalapeño to the mix. It worked nicely on 'Fajita Quesadillas' from AR. I also served 'Rice Elena' from AR.
