Corn Casserole III
A delicious recipe, just like my mom makes it. The only change I do is bake it in a 13 x 9 pan. The reason: everyone in my family likes the chewy outer edges and the four corners are the first four pieces gone from the dish! The only dish I make the inside pieces are the last to be eaten.

School Lunchroom Cafeteria Rolls
For me, this dough was a dream to work with and it yielded fantastic results. I halved the recipe and made 25 rolls of different sizes. I wanted some as dinner rolls and others as hamburger buns. I let the Kitchen Aid mix dough hook to do the work for me. What most impressed me about the rolls was how 3-4 days later the rolls were still extremely soft and fresh tasting. So many recipes I have tried are great the day I make the rolls, but the following day or two it is oblivious that they weren't made that day. For that reason alone, this a definite keeper for me and a recipe I will be using again.

Pea Salad With Pimentos and Cheese
I made this recipe using thawed, frozen peas and the rest as directed. I did let it rest overnight before serving. It was ok, but need more zip for us. The mayonnaise covered the pimentos and made them white, so I added some to the dish before serving to have the added color-pop. Served this with grill fish, grilled pork tenderloin, and 'Delicious and Easy Corn on the Cob' from AR. **To the leftovers, I added diced celery and dry roasted peanuts. For us, that gave the recipe the boost we were looking for. (My 3-star review was on recipe as listed, not with my add-ins.)
